Bisque for Breakfast

Not the best week, I ain’t gonna lie. But ya know what, it’s about over. And the hubs will be back home Monday after his Sunday race. Hopefully my stomach will be out of a knot by then. Or maybe I need to look into these tips, eh? haha.

Anyway, over the past few days the weather has started climbing its way up again. Oh Texas summer, you are brutal. But I WILL OWN YOU! It’s already hit 103F this week. I know EMZ, you have it worse out there in Arizona. And I heard its still snowing somewhere up north. Say what?!

But like I said, this weather…..its hot….BUT I WILL OWN IT! BRING IT ON! Up early for outdoor runs and teaching outdoor bootcamp before that sun and heat get us. It’s kinda nice. As Jessica and Heather would say, you get to see the world awake from its slumber. Very cool!

After an early morning outdoor sweat feast, I’m home for a second breakfast. And no, I am not craving whipped oats, OIAJ, green monsters, etc. I want something lightly sweet, refreshing, and COLD!

I have no idea how or why I made this but I am SO SO GLAD I DID! It hit the spot and taste amazing.

Bisque for the breakfast….the cold kind!

Coconut Mango Peanut butter Bisque (Cold)

Ingredients:
  • 1 cup mango (frozen works best)
  • 5oz plain yogurt (i used goats milk yogurt)
  • 1 tbsp orange marmalade
  • 1/2 tbsp coconut oil
  • 2 tbsp coconut butter
  • 1/4 cup cream or milk (i used almond milk)
  • ground ginger (or fresh would be nice too)
  • 1 heaping tbsp peanut flour
  • small spoon of smooth peanut butter (at room temp)
  • cinnamon and orange peel to garnish
Directions:
Combine everyone into a food processor except for your oil and butters. Blend until smooth, then add in your coconut butter, oil, peanut butter, and ginger. Blend again. Spoon into bowl and chill for a bit. If you used fresh mango, chill it a little longer. Then garnish with cinnamon and orange peel.

Spoon up and dig in. If you are like me, I slurped half.

Yep, the one perk of getting your run in early is watching the world wake up along with you. It's so peaceful to me - but maybe I'm just still in dreamland ;-) I can't really say I've been craving anything particular other than juicy pineapple. I think I'm going to start keep oranges cut up to enjoy right after a hot run in the mornings though. I never think of oranges after a run until I see them at a race.

YUMMMM! this sounds like the perfect summer treat. It has finally been getting hot here as well so I have DEFINITELY been craving cooler treats. I have just been making lots of protein smoothies but now I can't wait to try this!!

Love the early morning workouts!! Especially in this heat! As for cravings this summer? So far I'm ALL about the watermelon, cannot get enough. Could eat the whole damn thing in one sitting if I really tried, I'm pretty sure (though I don't think I'd feel very good afterwards LOL)

Looks amazing!  Right now my cravings are steering me toward watermelon.  The ever-present peanut butter craving is a four-season craving.

Your husband is adorable and what an honest race report.  It can take ages to recognize what might have gone wrong and how to fix it but he figured it out fast and is doing what is needed to turn things around.  He's lucky to have you in his corner!!  Good luck this weekend :-)

I am glad you are so positive despite what sounds like a craptastic week. Keeping your chin up despite that has got to make a huge difference! I know it does for me. Sending you good vibes! That bisque looks so good!! what a great combo. I too LOVE OLIVES! Used to hate them, but love them now, taste so good on their own or in a salad. Also, have you tried the chocolate covered banana slices (frozen) from Trader Joe's? (not sure if they are GF though?), to DIE for and only 20 calories a piece :) Very refreshing. I've also been downing watermelon like it's going outta style!

agreed with your friends jessica & heather. I did an early morning run today (6 am) and asides from being really sleepy, it was wonderful. run with friends, cool morning breeze (n. tx is so windy, especially the town where I live), beautiful sunrise. it was so quiet. one of the reasons why I love early mornings.

So far the heat is owning me =( I am so not a morning person and I am so struggling to get up and out the door early enough to run. Plus, for some reason the past couple of days I've woken up with stomach pains and feeling a little nauseous (no idea why)... which just makes it all the more difficult to get out the door. 

That bisque looks absolutely delicious. I want it now! 

I've eaten a ton of pineapple lately. They've been pretty decently priced at Wal-Mart, and they've tasted so good! Cold, sweet, juicy, with a little bit of tang.

YUM! I think my favorite ingredient in this is the ginger. I LOVE ginger. I always get extra, extra at sushi restaurants & sit there & just eat it. Everyone is amazed how much ginger I can eat when they go out to get sushi with me. I don't know why I love ginger so much, but I do!
The flavors in that smoothie just sound SO good together. Random, but really good!! :)

Wow, what a way to start the day! Love this recipe...It combines three of my favorite flavors: coconut, mango and peanut butter! I wish I had access to such deliciousness right now...I'm enjoying an assortment of goodies from a hotel breakfast bar: oatmeal and a banana. :-p Question though: what's the difference between coconut butter and coconut oil? I thought they were the same thing! 

I hope you're staying cool in the heat! It's been about 100 degrees and humid in DC all week, but I'ma actually loving it! Nothing a dip in the pool or an ice cream cone can't cure, right? :-)

I always drink peppermint tea to calm my tummy.If you are going through stress,eat 5-6 dates with warm nut milk before you get to bed-It makes a huge difference:)

oh yikes, thats hot too! Coconut oil is actually the oil pressed from coconuts.
Raw and great for cooking! Coconut butter is actually 100% raw coconut, churned
into butter. Does that makes sense? Kinda like peanut butter (raw) and peanut
oil.

Oddly enough I still can have my cooked oats and hot coffee, but as soon as I step outside that door for the first time, any ideas of having a cooked meal go right out the window! I can't even walk to my mailbox without sweating! What happened to Spring?!
