Bisque for Breakfast

Not the best week, I ain’t gonna lie. But ya know what, it’s about over. And the hubs will be back home Monday after his Sunday race. Hopefully my stomach will be out of a knot by then. Or maybe I need to look into these tips, eh? haha.

Anyway, over the past few days the weather has started climbing its way up again. Oh Texas summer, you are brutal. But I WILL OWN YOU! It’s already hit 103F this week. I know EMZ, you have it worse out there in Arizona. And I heard its still snowing somewhere up north. Say what?!

But like I said, this weather…..its hot….BUT I WILL OWN IT! BRING IT ON! Up early for outdoor runs and teaching outdoor bootcamp before that sun and heat get us. It’s kinda nice. As Jessica and Heather would say, you get to see the world awake from its slumber. Very cool!

After an early morning outdoor sweat feast, I’m home for a second breakfast. And no, I am not craving whipped oats, OIAJ, green monsters, etc. I want something lightly sweet, refreshing, and COLD!

I have no idea how or why I made this but I am SO SO GLAD I DID! It hit the spot and taste amazing.

Bisque for the breakfast….the cold kind!

Coconut Mango Peanut butter Bisque (Cold)
sun chlorella and bisque22
sun chlorella and bisque17 sun chlorella and bisque18 sun chlorella and bisque21 sun chlorella and bisque20

Ingredients:
  • 1 cup mango (frozen works best)
  • 5oz plain yogurt (i used goats milk yogurt)
  • 1 tbsp orange marmalade
  • 1/2 tbsp coconut oil
  • 2 tbsp coconut butter
  • 1/4 cup cream or milk (i used almond milk)
  • ground ginger (or fresh would be nice too)
  • 1 heaping tbsp peanut flour
  • small spoon of smooth peanut butter (at room temp)
  • cinnamon and orange peel to garnish
Directions:
Combine everyone into a food processor except for your oil and butters. Blend until smooth, then add in your coconut butter, oil, peanut butter, and ginger. Blend again. Spoon into bowl and chill for a bit. If you used fresh mango, chill it a little longer. Then garnish with cinnamon and orange peel.

Spoon up and dig in. If you are like me, I slurped half.
sun chlorella and bisque23
And if you're like me, I save the rest make mini Popsicle cups!
 sun chlorella and bisque26
What’s one thing you craved this summer that's surprised you?

I’ve also been eating olives like crazy. My salt fix!

Cheers to a FINISHED week!

Sable, you won the free LIPTON coupon. I will send it to you!

I never would have thought of making anything like this for breakfast, but it looks really tasty! My summer craving has been hummus :)

Heather (Where's the Beach) said...

Yep, the one perk of getting your run in early is watching the world wake up along with you. It's so peaceful to me - but maybe I'm just still in dreamland ;-) I can't really say I've been craving anything particular other than juicy pineapple. I think I'm going to start keep oranges cut up to enjoy right after a hot run in the mornings though. I never think of oranges after a run until I see them at a race.

Julia said...

YUMMMM! this sounds like the perfect summer treat. It has finally been getting hot here as well so I have DEFINITELY been craving cooler treats. I have just been making lots of protein smoothies but now I can't wait to try this!!

Emma (Sweet Tooth Runner) said...

Mango+coconut+PB sounds like the best combo EVER!! Haha we haven't had much 'summer' here in London sadly! :P Gotta get me some mango do I can make that!! And I hope the rest of this week is better for you than the start was! GOOD LUCK to the Hubs!! :)

Katie said...

I've been craving cucumbers.  Must be the water, because last summer I hated them.  And every summer before that.

Your bisque looks fantastic!

Sarena (The Non-Dairy Queen) said...

Oh Lindsay, I hope James has a great race and that the week ends on a high note for you! That bisque looks and sounds amazing! I'm still loving my hot oats these days, but I have a feeling that will change when we are at the lake this summer! I'm thinking about you!

Jess said...

Love the early morning workouts!! Especially in this heat! As for cravings this summer? So far I'm ALL about the watermelon, cannot get enough. Could eat the whole damn thing in one sitting if I really tried, I'm pretty sure (though I don't think I'd feel very good afterwards LOL)

Cortney Martin said...

Looks amazing!  Right now my cravings are steering me toward watermelon.  The ever-present peanut butter craving is a four-season craving.

Your husband is adorable and what an honest race report.  It can take ages to recognize what might have gone wrong and how to fix it but he figured it out fast and is doing what is needed to turn things around.  He's lucky to have you in his corner!!  Good luck this weekend :-)

I am glad you are so positive despite what sounds like a craptastic week. Keeping your chin up despite that has got to make a huge difference! I know it does for me. Sending you good vibes! That bisque looks so good!! what a great combo. I too LOVE OLIVES! Used to hate them, but love them now, taste so good on their own or in a salad. Also, have you tried the chocolate covered banana slices (frozen) from Trader Joe's? (not sure if they are GF though?), to DIE for and only 20 calories a piece :) Very refreshing. I've also been downing watermelon like it's going outta style!

kalli said...

so sorry you had a tough week girl!  hang in and yes read some of YOUR posts.....they are very uplifting for sure.  love that soup/smoothie?  it looks perfect after a hot run.  enjoy your friday!

Angie said...

Sorry you had an off week....I love olives too ;)!

Jennifer Packer said...

This looks refreshing and like it would really hit the spot after a hot run!  I don't know how you're dealing with those temps!  We'll get them soon enough, but I'm still working into summer!  You always have the best recipes!

Katy said...

That sounds delicious!! :)

Emily said...

You had me at mango and coconut.

I actually love brutally hot weather, and we just don't get it here on the coast!  I would trade a few days with you if I could :)

Lately I can't get enough mushrooms.  I've just been snacking on them plain, raw.  Not sure what lies behind that craving...?

Tri-Living...Together said...

Please just pack up your food and mail it to me.. thank you.

Casey said...

You are the only other person I've ever "met" that eats goat's milk yogurt. I feel a bond coming...LOL!

Michelle @ The Cooking Life said...

agreed with your friends jessica & heather. I did an early morning run today (6 am) and asides from being really sleepy, it was wonderful. run with friends, cool morning breeze (n. tx is so windy, especially the town where I live), beautiful sunrise. it was so quiet. one of the reasons why I love early mornings.

Teamarcia said...

That looks goooood! Definitely craving salt here too...and raspberry lemonade, which it totally weird for me.

Molly Mcnamara said...

Good luck to your husband this weekend!!! Eagleman should feel nice and cool compared to that weather!

Susan said...

This would be perfect right now considering how hot it is.  And, I love that it's healthy but I'm drooling over it like a dessert.

lauren@spicedplate said...

that sounds delicious!

Trisha said...

I love watching the world wake up. I've been getting my runs in earlier now, and when the sun peaks over the mountains is my favorite part of the run.

Sable said...

YAYYYY I never win anything :D now I'll have something to look forward to OTHER than my acceptance/rejection letter! haha.

I've been eating a TON of smoothies lately (my heart wants to believe it's summer even though my body says it's 60 degrees) but this looks like a nice way to switch it up!!

Gen said...

Aaaw hope you feel better soon!!! Have a nice, relaxing weekend!

Vanessa @ Gourmet Runner said...

I love that quote "you get to watch the world awake from its slumber." Beautiful! We're suffering in the heat over here in Georgia but it's not over the 100s thankfully! Hope you can relax and rest over the weekend and enjoy having the hubs home Monday!

BRING ON THE HEAT. I get to Austin TONIGHT at 11pm! I am so excited, I am basically flipping out. We must meet up and run or work out or EAT or do anything really!

Stephanie said...

Wow I am so impressed that you can manage running in that heat!!

Heather @ Dietitian on the Run said...

Interesting mix of flavors! My mind would never go there, but I'd give this a try ;) Sounds delicious after a Hot run!

I haven't craved anything surprising just yet - but I'm wanting a smoothie every day! I just don't have the patience to clean the Blender every day...haha.

Sam said...

i have been all about mango recently so this sounds awesome!! texas summers are rough, but i'd take them over snowy winters any day :)

Rachelle Wardle said...

Thinks WILL get better I promise!  Just keep being your positive self.  You are amazing for waking up so early to teach boot camp.  I wish I could come to your classes.  I have been eating olives straight out of the can this week.  So weird but so delicious!  :)

Shannon said...

So far the heat is owning me =( I am so not a morning person and I am so struggling to get up and out the door early enough to run. Plus, for some reason the past couple of days I've woken up with stomach pains and feeling a little nauseous (no idea why)... which just makes it all the more difficult to get out the door.

That bisque looks absolutely delicious. I want it now!

I've eaten a ton of pineapple lately. They've been pretty decently priced at Wal-Mart, and they've tasted so good! Cold, sweet, juicy, with a little bit of tang.

Jess said...

Mmmm, thanks for this recipe--it looks so good!! I adore mango :D

Olives? Haha. I LOVE black olives..can't stand the green ones. ICK!!

The flavors in that smoothie just sound SO good together. Random, but really good!! :)

Wow, what a way to start the day! Love this recipe...It combines three of my favorite flavors: coconut, mango and peanut butter! I wish I had access to such deliciousness right now...I'm enjoying an assortment of goodies from a hotel breakfast bar: oatmeal and a banana. :-p Question though: what's the difference between coconut butter and coconut oil? I thought they were the same thing!

I hope you're staying cool in the heat! It's been about 100 degrees and humid in DC all week, but I'ma actually loving it! Nothing a dip in the pool or an ice cream cone can't cure, right? :-)

Happy Saturday, Lindsay!

oil.
