Fully Loaded

Fully loaded, that’s about right. My life has been swallowed with a fully loaded schedule. Holiday events, work, work, work, and more. BUT, this is where is gets good. I have two options here. I could stress out, feel overwhelmed, complain to the hubs, and not get any sleep. OR…..I could stop, smell the holiday candles, thank God for his many blessings, and move on with my daily routine. If things don’t get done, no sweat. I will get to it. My dad always said “don’t sweat the small stuff,” and there are sooooo many small things that can be let go. Why I didn’t I realize this 10 years ago? Then maybe I wouldn’t be so OCD! hehe!
So after last week’s feast and festivities in the kitchen, I kinda lost my motivation for making me and the hubs made from scratch dinners. EEK! Lucky for me, he’s easy to please so this was a “small thing” that I could let go of.  I did end up with one decent meal concocted of whatever was left in my fridge, once again. Sorry hubs, I promise to go to the store and buy real food this weekend!

Fully Unloaded Skillet Potatoes and Eggs:

Ingredients:
  • 2 eggs (to poach on top)
  • 1 large russet or sweet potato (I used russet)
  • 1 can organic garbanzo beans
  • 1 cup frozen kale
  • 1 cup diced veggie burger patty (homemade or store bought- I used GF sunshine burgers)
  • minced garlic (to taste)
  • salt/pepper (to taste)
  • 1 tbsp oil (I used grapeseed)
  • 1/4 cup GF hoisin sauce

Directions:
  • Dice potato and partially steam in microwave (about 2-3 minutes)
  • add it to skillet with garlic, salt/pepper, and 1 tbsp oil
  • add in your drained garbanzo beans, kale,  and veggie burger. Mix well.
  • Cook well for 2-3 minutes. Then add your hoisin sauce and cook until potatoes are done and kale is fully cooked.  Then set aside.
  • Break your eggs into an egg poached. I used our quick and easy microwavable egg poacher. I have to admit, the egg poacher looks like boobs to me. haha.

  • Place egg poacher in microwave for 45 seconds to a minute. (can you see how lazy I was? ha!)
  • Once eggs are done, place on top of potato skillet mix and serve up with a side of HODGE PODGE BREAD!

No sweat, literally. It was another hodge podge meal but I am SO okay with that and luckily the hubs is too.
Speaking of sweat, I’ve got a killer track/treadmill workout to post this weekend. Do I dare post another playlist??

I love reading your blog for many reasons but one being you always have such a good attitude and help everyone else too have an optimistic approach to life, and two you post boob egg poachers...awesome!

lol - the egg poacher! I love hodge podge meals. Lots of flavors and textures make eating so much more fun. and I've never tried a sunshine burger but I've heard good things so I'll have to put them on my grocery list.

I'm going to stop and smell the holiday candles more this month. :)

So...Confession..I pretty much only microwave eggs. I never think to fix them for dinner. Such quick/easy protein!
Gah. I feel like an egg now and it's almost bedtime. haha.

Lindsay, you are just a doll! There was a chance I was going to spend a day in Austin over our TX Christmas vacation and I totally would have wanted to meet you, but looks like we aren't planning an Austin trip after all:(

You are SO right about not sweating the small stuff (and most of it is "small" compared to what really matters). I had to have one of these realizations just this morning (which I'm going to blog about later) and luckily my Hubby keeps me grounded and helps me put things in perspective:)

I am in the SAME loaded down boat. I really have to relax and know that Rome wasn't built in a day and my house can't look like Christmas Town in a week, lol.

EGGS!!! Shoot! Sometimes I try to get too fancy in the kitchen, and forget how much I like the simple stuff. I haven't had eggs in months! Did you know some people get gassy after eating eggs, and if you only use the yolks, the problem disappears?? I'm not saying *I* have that problem...I'm just mentioning it in case one of your READERS has that problem ;)

hee hee - LOVE the egg cups ;) ...I grew up on poached eggs... and I actually have one of those micro poachers and have NEVER used it... do they really come out okay? :D
