Just call me Sir SPAM-a-lot

oh goodness goodness. Is it Friday yet?  Well, the weekend was nice and thoroughly enjoyed. I picked up the hubs yesterday and we are back in FULL SWING of life. Unfortunately my computer is not. You see, for the past 10 days I’ve received three viruses. WHOA! How did that happen? You know what I did to remedy this? Called our good “tech” friend to the rescue. He fixed it not only once, but twice! I owe him endless amounts of Healthy Bites that's for sure.

After he fixed it the second time around, I had to reboot all my files, software, etc. (and I am still in the process of doing that). Anywho, my computer no longer recognizes my gravatar/email commenting set up, so all you wordpress bloggers….I AM GOING TO YOUR SPAM! I think I have the magic touch to spam all computers, haha.

In the midst of all the technology debacle yesterday, I just had to laugh! I told the hubs that we are quite the pair. It’s a good thing we know how to turn off an oven, right? Speaking of ovens, I decided to get my head out of my computer yesterday and ENJOY some baking! That’s one area where SPAM is not allowed……yet.

Since the hubs is enjoying a recovering week, and with that being said, I try to up his antioxidants/protein. This means lots and lots of good veggies, omega rich foods, etc.

  Good thing I have these bags to keep them fresh all week!

Seriously, check out Clearly Fresh Bags. They will save your produce! My kale lasted 3 days longer.

And for the omegas/protein./antioxidants….the oven was my friend.
Luckily I had saved one of Chrysta’s Recipes via email and after seeing it on Tianna’s (Tea Bagg) site again, I decided to “Cotter-ize” it.

Cheesy Flax Protein Bread

(Grain Free)

Ingredients:   (Makes 10-12 slices) 

60gr plain protein powder (I used life Basics Unsweetened)
1/4 c. Greek Yogurt/Cottage cheese (cottage cheese is rich in amino acids)
2 eggs and 1 flax egg (flax egg- 1 tbsp flaxmeal and 2-3 tbsp water)
1 Tbs Nutritional Yeast
1 Tbs. Unsweetened Tomato paste
1 tsp. Turmeric (High antioxidants)
dash of paprika (optional)
1 tsp. Crazy Jane Salt Mix
1 tsp. black pepper
1 tsp. baking powder
1 tsp. baking soda

Directions
Heat oven to 350F. Combine all ingredients into a bowl. Mix well. You might have to add in some milk if its too thick. Coat a loaf pan with a non stick spray. Pour bread mixture into it. Bake at 350 for about 25 minutes. Might be a little longer if depending on your oven.

Slice and eat!

It’s actually really good with a little butter or cream cheese/tomato on top!

Alright people, time to go de-spam my computer once again! If I haven’t gone crazy (okay crazier) by tomorrow, I’ll post a WIAW and/or WIWW. Maybe SPAM will be on the menu. Haha, I know this girl has made it before!

good to hear about the bags - I never really know if they work or not?? someone has been emailing me to try some (perhaps those!) and I don't know why I'm such a skeptic :)

I remember several months ago that happened to me, my gravatar was messed up and I was in everyone's spam jail. once released I was fine. ;)

Oh, I hope you get all the bugs out soon. Of course, you can always refer back to my Mac comment and fix it entirely : ) The bread looks oh so yummy! I need a better oven that would allow me to bake in the summer and not make my house 100 degrees!

Argh TOTALLY feel ya on the technical issues!! Thankfully my tech guy got my virus sorted out...after 3 days of working on it!! He said it was 'pure evil' haha! :P

And that bread sounds AMAZING! The Hubs is so blessed to have such an amazing wife with killer skills in the kitchen!! He'll be fully recovered from his race in no time with all your amazing Cotter food:)

Urgh, computer troubles are annoying, bc it renders me helpless. Get a Mac, Lindsay! It's pretty straightforward and easy to get used to, and I've had mine for 3 years and never had any virus problems.

 And that loaf looks and sounds like something I could eat on the reg. Bookmarked! As soon as I get home.... But I need to buy a different protein powder first. I CAN NOT bake with whey protein isolate. It tastes terrible no matter what - the texture. What kind of  protein should I buy instead? Normal whey? Soy? Rice? Ideas?

I had no idea that tumeric was high in antioxidants!  You always post the best looking recipes!  You're so good to take care of your hubby after his race.  
Sorry about your computer situation.  Our hard drive died a little while ago and if we wouldn't have had our back up running I would have lost everything!  I think you posted a while ago about technology and the pain and pleasure that it is.  Glad you're back to normal!

I got the Clearly Fresh bags as well - don't use them for bananas. The moisture in the bags builds up and mold will start to grow!

Oh Lord, SPAM...now THAT brings back some childhood memories! Fried and slathered in ketchup...maybe even on a slice of bread! How did I eat that stuff?!!

That bread sounds like it would be absolute Heaven with cream cheese and tomato!! Mmmmmm!

I have to say I'm a little relieved to read that you were talking about computer spam and not real food spam.  I thought "Not Lindsay, she would never eat spam".  So that is a relief.  Sorry about the viruses.....such a pain.  I must admit having a mac is great for not dealing with viruses although I am still learning all the "new" programs.  Hope your virus days are over.

Computer virus are the worst....backup your pics! that is my advice..we had a virus last year and we lost a lot of stuff..some pics and it broke my heart. A guy was able to recover a lot of files but not all of them.  Now I am better at backing up the pics on an external drive.

Spam is the lamest.  Sorry girl!  Thanks for another awesome protein recipe!  I need to buy unflavored protein.  I keep seeing great recipes with that ingredient.  All I have is chocolate, cinnamon roll, and vanilla.  Hmmm, chocolate cheesey bread sounds...disgusting!  Hahahah!

I gotta try those bags. I refuse to clean out the fridge so it's Dave's job. He yells at me every time he comes across old produce... which is pretty often! If it's even the slightest bit questionable, I don't touch it. So it just sits there.. hahahahah. Oops!
