Blessings and Bites

Alarm goes off at 4:45am, the hubs and I mumble to each other “what day is it?” Oh ya, its Monday. Time for swimming. We’re up. The hubs grabs his smoothie that I made from the night before and is out the door by 5am. I brew the coffee and go ahead and make his post workout breakfast for when he gets home. I sit down at the table by 5:30am. I have 30 minutes of quiet time before I must start heading out the door. The world is asleep and I am awake with my coffee in hand. I open up my computer to read my online devotional and “POP,” a message window appears.

“Count your Blessings.”

I forgot that I had programmed that. You see, a while back I had randomly picked days on my computer calendar to set off a reminder. A reminder that said just that…”Count your Blessings.” What perfect timing, before the busy hustle bustle of the day begins, I can quiet my mind and count.

I open up my prayer journal and begin to write. These are not prayers, more like praises. Praises that leave no room for complaints.

The coffee is gone and I must eat my breakfast and get my things together. Oh wait, before I forget, there is one prayer to write……..

“I pray that I remember to count these blessings DAILY because life’s too short to let them slip by.”

 

A PEAR of Blessings "Bite"

I made these HEALTHY BITES a last year for a flavor of the month. The ingredients are so soothing together and just make me HAPPY!

Ingredients:
  • 1/2 cup gluten free cereal (I use either brown rice crispies or GF amaranth/corn flakes)
  • 1/2 heaping cup chopped nuts or seeds (I used almonds but pumpkins seeds also work well.)
  • 1/2 tsp ginger (optional)
  • cinnamon
  • 1 tsp vanilla extract
  • 5oz dried unsulphured pear
  • 1.5 heaping spoon of almond butter
  • 1/4c honey
  • 2 tsp flaxmeal (optional)
Directions: Blend cereal, nuts, and dried fruit together in food processor. Transfer into a large bowl and add in all the remaining ingredients. Mix well ( I use my hands) and roll into bite size balls. Makes about 22-23 Bites. Freeze or keep in refrigerator to maintain freshness.


Best enjoyed with Greek yogurt or coconut ice cream!

Did you count today? If not, stop, do it now. It will make you smile!

I love your mushy, my friend. once again your thoughts are right on par with whats up with me! I have had many things to be thankful for and have been taking the extra time lately to reflect on them. I had (another) amazing conversation with my sis today - the importance of being positive during tentative times... Oh you two are definitely better than me today - the alarm went off at 4:45 and I went "don't wanna swim" and opted for extra sleep/cuddles with husband.   I'll be making up for that indulgence tomorrow!!!

I always try to appreciate the little positives in the day :)  So I didn't swim but I got extra rest my body needed.  My boss was 2 hours late for our scheduled call, well that just meant I had more time to be productive (and play Lada Gaga's new album a few more times on repeat).  My new jeans are waaaaay too big for me, well now my mom gets them!

I LOVE this. What a great idea...and such an awesome reminder to get when we least expect it :) I so often forget to count my blessings as it is so easy to get caught up in the hustle and bustle of expectations and deadlines. I think I will take a few minutes now to breathe in and out some relief as I remember the truly important blessings I have in my life :) Thanks for the reminder!

such a good reminder. I think we all forget to do this sometimes!
When I worked with teens I always did "two stars and a wish" - which is two good things that happened today - and a wish for tomorrow!!  I didn't think they enjoyed it, until one day I got too busy and I forgot.  I got emails from the teens all week saying how much they missed it!  I never forgot one again.  I used to do it with my husband too, but he didn't enjoy it as much as I did! too bad!

It really can be a challenge to remember blessings daily. I have definitely found that with blogging and reading fabulous posts by other bloggers I am reminded to remember my blessings more often than I would otherwise. I need to start some early morning reflection time. When I run alone I go without music to also reflect and by joyful :)

I love that you set up a reminder for yourself!  I was disappointed about a few silly things over the weekend, but I was able to clear my head and put things into perspective when I went running this morning.  Felt better right away!

Pear and cinnamon is definitely a warm, comforting combo, I totally agree!

Love that! I want to set a reminder on my laptop. I label my morning alarm clock settings in my iPhone to say happy things so when the alarm goes off, I read something positive!  The thing is - my alarm rarely goes off anymore. I always manage to wake up at least a few minutes before. I'm counting my blessings...you are one of them!

That is a great idea, Lindsay. Oftentimes, we get bogged down by the busy-ness of life that we don't take time to remember what we have NOW. Oh my goodness, I love that you added random reminders on your calendar! What a great idea!:) And no, I don't think I counted yet today...but I will now! One thing I am thankful for is my little sister moving in with us this week! She is staying for the summer and we have not lived together for a good 7-9 years now (depending on whether you count college summers;)! I went off to college first and then my family lived in Australia for three years, and I stayed here! I am so happy to have her here every day again:).

I love this idea! I have a gratitude journal but forget to write in it, though I do remind myself daily of my blessings. I'm going to take your idea and use it with the  calendar - it is so wonderful! 
As for those bites- they look delicious. DO you think you could swap flax meal and/or coconut flour for the cereal? ( or some non grain option like almond flour?)

I love the pop up and the time you take for prayer.  I've recently started a prayer journal and noting the many verses regarding (the power of) prayer in the Bible. Below are some that I had to share :)
