What’s Working is…………
First of all, a little retail therapy from World Market
My new Wine Rack!! I love it!! Got it for $50 marked down from $199. Now that’s a steal! World Market, you just made my week.
Secondly, good products! Thanks to CSN Kitchenware for a fabulous find. How did I go without a toaster oven for so long?
This one has a built in Toaster and it fits perfectly I my tiny kitchen. I am seriously obsessed. Now I can make a yummy breakfast in NO TIME! Yes, those are my Udi’s bagels! hehe.
And last but not least, more FUEL COOKIES!! The hubs really liked my first batch with his 4+ hour ride, so I decided to make another round, different Flavor of course.
(GF) Banana Pineapple & Pretzel
Fuel Cookies
Lets call them BPP Fuel Cookies for short. Mmmmm k?
Ingredients and More:Nutrition Facts Per Cookie: Calories 63.2 Fat 1.6 g Sodium42.9 mg Potassium 39.6 mg Carbohydrate 10.5 g Fiber 1.0 g Sugars 7.7 g Protein 2 g
Directions: Place pineapple rings in food processor, blend until it makes one big batter (thick and sticky). Transfer into bowl and add in remaining ingredients. Mix with hands (yes, I am classy like that). Roll into balls and flatten with hand into cookies. Place on wax paper and store in freezer. Makes around 16-18 cookies.
- 1/2 lb. bag of dried pineapple rings (equivalent to about 8-10 dried rings)- Natural sugars/carbohydrates used for quick ENERGY and restoring glycogen.
- 1 serving protein (30grms)- I used Jay Robb Pina Colada. You can use vanilla as well. – protein to support muscles.
- 2 tbsp Nuttzo. If you don't have Nuttzo, use 2 tbsp chunky nut butter – Good source of fat for slow release energy.
- 3 heaping tbsp crushed banana chips- potassium rich natural energy.
- 1 tbsp chia seed and 1 tsp flax seeds.- Chia seeds are contain a good source of omega-3 and omega-6 fatty acids. They are also rich in fiber, protein, amino acids, antioxidants, and a lots of different nutrients, (including calcium, B vitamins, zinc, boron, potassium, copper and phosphorus).Check out THIS article for how they effect glycogen storage.
- 1 tbsp honey-
- vanilla extract or vanilla stevia.
- 1 handful crushed GF pretzels- gluten free carbs for energy
So there you have it. This is WHATS WORKING WEDNESDAY! I’d rather not going into what’s not working. I’m on a high here. haha!
What's working for you today? I know there’s something!
Cheers,
LC
P.S.
My husband is from Christchurch, New Zealand. They were struck with a major earthquake on Monday. Our family is all safe (thank you GOD), but there are many other people hurt and lots of damage done. Please keep them in your thoughts and prayers.

Girl you're a genius. Love this recipe! And I love that wine rack. What a deal. I must check out World Market now.
And I am very glad to hear that your in-laws are safe after the earthquake. When I saw the news I immediately thought of you guys.
Lindsay,
I've been reading your blog a while and am a fellow Austinite :) I had a few questions for you regarding possible workout info for the area (just moved here in August) I would rather not post them, do you have an email address I could send them to?
Thanks so much!Katelyn
Prayers to those involved, harmed, or whom have lost loved ones, and your family!
I am simply LOVING your attitude, lady! The timing of you posting this was perfect; I'm about to go to the market, so I can pick up things for these fuel cookies! And my roommate would die if he saw that wine rack...I'll have to keep him away from WM (it's like his second home).
Muah, happy Hump Day!
Another fuel cookie recipe? I still need to make the first one! I better get on that asap. :)
I heard about the New Zealand earthquake. Reading things like that and hearing about the damage and losses always makes me tear up. I'm so glad your husbands family is okay!
I'm so glad your family is safe and sound! That must have been super scary for you guys.
What's working for me this week? Getting my workout out of the way early early in the morning!
Love this post! Every word. And your new wine rack is fabulous. I love stemless wine glasses, too! (Less risk of breaking them - haha.) Billy was adamant about us registering for a toaster oven and we love ours! Use it all the time. I still haven't tried the Udi's bagels - need to pick some up. But, it's been almost a month GF and I'm loving it. Apparently, I'm LOVING a lot of things in this comment. And I'm with you - I do NOT love the term "hump day" - don't even like typing it just then.
I went to World Market this week too!! :)
these cookies sound awesome - I have some gf sesame pretzels and I've been trying to come up with sometimes creative to do with them...
I am so glad your family is all safe - such a devastating thing, I have been praying for all the kiwis over there!
I am so glad to hear that your hubbys family are safe. It is truly heartbreaking what has happened :( thinking of you guys xx
Thoughts are with NZ and I'm glad that your fam is safe.
Those cookies look bomb! Next time I get pineapple this is what I'm making ! Guess who else went to World Market today? Me. But I only got a basket not an awesome wine rack!
I was thinking of you and your husband as I thought there was a NZ connection - so sorry for all that they are going through. Thoughts and prayers.
Those cookies look delicious - am going to try making them!
I am glad your family is ok. My thoughts are with everyone there. It is a horrible thing to see happen to anyone.
Oh MY those cookies look SO DARN GOOD!! Sadly, eating them outta the screen didn't work...so send me some, k? :P
SO glad to hear your family are all okay!! I'll keep praying though:)
SHAZAM THOSE COOKIES LOOK GOOD and those nutrition stats are stellar! oh my goodness im so so happy your family is okay.. the whole thing is just horrible and I am keeping all the families who have lost one of have been hurt in my prayers.
what has been working for me today is my new DRY SHAMPOO! I have never used it before and its so awesome!!
I am all over those fuel cookies--will definitely make!
Thank heavens you fam is ok in the quake. Everyone in Christchurch is in my thoughts and prayers.
1. a toaster on top of a toaster oven? GENIUS
2. i have never, and i mean NEVER, seen such an interesting cookie recipe. I'm in awe.
3. thinking of those who are over in New Zealand.
Those fuel bites sounds great!! And I am glad everyone in Hub's land is doing good.
My day has been pretty exciting so far -http://smritialive.blogspot.com/2011/02/bread-makes-me-mad-hatter.html
Have a great day!!!

I love the idea of your fuel cookies! so fun!
I'm so sorry to hear about the earthquake =( I'll for sure keep everyone in my thoughts. so scary!
World Market is the best - they have the cutiest home goods section! And your cookies look really good - I love the sweet and salty idea with the added pretzels!
Those cookies look delicious!!!! =D
Whats working for me is family time and watching some movies!!
Just last night I decided I wanted a wine rack exactly like that! The link didn't work for me when I clicked on it in your post. I went to the World Market site but, can't seem to find it. I'm in Austin, can you email me and let me know what store may have one? penny01966@yahoo.com. Thanks!
Very glad to hear that the hub's family is safe, and prayers out to all affected in any regard.
Wonderfully working: 1st swim back now that the HS kids have left the pool (mm... all 8 lanes to myself...too bad I couldn't clone myself and really get a work out in! ;-); little nephew is visiting and I get to see him on Fri/Sat (will I ever make it til then?? :-); made nephew's b-day gift in school today and my students commented, "oh...that's cool.... " and they meant it! :-); had a nice impromptu meeting with the round of principals (all three, all different times); have managed to not eat all of the homemade granola bars (success!).
There's more, but that's good for now! :-)
Oh.. one more.. feeling a twinge more comfy and accepting of the life change decisions... always appreciated!
"hump" day? LOL ;)
oh and I hate the term "hump day"!!!
LOVE your wine rack its so cute! World market is one of my favorite stores they have the cutest kitchens stuff and best wine selection, we dont have one here so when I visit my parents its always on my list of places to go.. cookies look yummy as well I havent baked in awhile but as soon as I do im making those and your fuel cookies :)
ohh and im glad your family is safe ill keep them in my prayers.
Um, yum. Those fuel cookies look so good too!!! I LOVE your wine rack, it looks fantastic! Now to fill it up...it *is* winesday afterall ;-) PS. Sending prayers to all those impacted in NZ. So very scary. SO glad your hubs' family is safe, what a blessing.
Those cookies sound so fun! What's working wed was great for me - I had my best & fastest run in a while. The earthquake is pretty terrible, I have a friend from New Zealand that spent last summer counseling with me at a summer camp, and she is thankfully okay, but she was pretty upset when I was able to talk to her yesterday.
i think i'd like the term hump day if i knew that's exactly what would be going on ;)
I have been missing out on your updates for so long now, it feels good to be back to a computer!
You hubs is one lucky guy to get those cookies for his fuel! Hopefully he is grateful :)
You can make most anything in a toaster oven! I love your finds (World Market? I miss. Love their foodie and wine section.)
So cool how you include the nutritional props on your ingredients. (0:
Um, can I have your coffee pot? I love red kitchen stuff.
Glad your family is okay!
I cannot wait to do some serious 4+ hour rides in a couple weeks with those cookies in my jersey pocket! I can't wait to try this recipe out!
and I definitely started sending prayers when i heard about the quake in Christchurch- I was really happy when James posted on Twitter so quickly that everyone was okay!
FUEL COOKIES! Yum!
What's working for me today is green monster smoothies. I've been rocking them out for breakfast and lunch, and they left me feeling absolutely fantastic.
I'm glad your family is safe! Definitely keeping the earthquake victims in my thoughts.
The wine rack looks awesome! And I love the toaster. I might have to look into getting one for us!
Keeping everyone in Christchurch in my thoughts. So glad to hear that the hubs and family are alright!
Another thing I miss... World Market. Those 'cookies' look awesome!
I should have thought to get a toaster oven! Darn! Maybe next time!
The cookies look amazing!! They seem very summery...if I make them, might spring and SUN come sooner?! I can dream, right? ;)
Those look fantastic! Next on my list for sure! I am sending all thoughts and prayers your way.
i love toaster ovens!! i had one at my old house...i miss it!! And wow those cookies look amazing! i need to bake this weekend...NZ is in my thoughts and prayers :)
love your wine rack and what a great price for sure......so cute. so scary about the earthquake. i am really glad everyone is okay.
Hey love!!
Those cookies look great and everything you bought is beautiful!! I have the same wine glasses, aren't they fantastic?!?!?
I'm having a rough Wednesday, and not much is working for me right now, so we'll just keep it at that! haha :)
You wine rack is so adorable! I love the glasses and how you arranged them! And my toaster oven was a dear friend in my kitchen for several years and the only oven I had until recently.
our Whole Market just closed and I am so sad. I used to go there all the time for unique gifts. I am so happy to read that your family is ok. What a tragedy. It is so sad to see the images on CNN. I bet your husband was very worried.
I am dying to go to a world market!
I also am itching to get a toaster oven - I think they are a great addition to any kitchen.
I have been keeping the people in New Zealand in my thoughts. What a tragedy!
I've been keeping y'all in my thoughts & prayers, as well as the rest of NZ.
Just realized how much I miss my toaster oven... boo. :(
Not too bad over here, everything's packed, I ran, and the kiddo is being uber cute tonight. I'll take it!
Praying for the New Zealand folks touched by the quake! I like how BPP is similar to PBB... I think it's destiny that these are my cookies ;)
I'm so relieved to hear you hubs' family is ok! My heart really goes out to them!
And like I said on facebook, cookie monster is my real name. I'm all over these cookies!
PS theres a cost plus across the street from my apartment. Not that it had anything to do with my decision to move there ;)
Hi!
So fun to read this;-) first, thanks for the shout out;-)
ANd more importantly...stoked for your new toaster!. woo-hoo!
and yah...very sad to read about the new zealand earthquake. energy and good thoughts sent to James' family's friends and community
xo
am
Those cookies look delish!! I'm going to have to stop being lazy and make some of these for my long run this weekend :) Love the wine rack!! so pretty :)
Good to hear that your family is safe!
I saw James's Tweets and I have been praying your family there.
Those cookies sound great... almost better than being able to go on long rides. Can you ask James if he knows anything about a Retul bike fit- or should I shoot him an e-mail? I might get on the fits this weekend for the Felt!
I LOVE World Market! I love getting the international candies since I have never been out of the US :D
The wine rack thing looks fantastic in your room!!
I thought of y'all when I heard about New Zealand. Hoping everything gets better
I have been trying to comment on your last few posts and couldn't :( But now I can!! YAY
Love the new wine rack and it is great when you find great deals, World Market is great!
Holy cow your hubs was/is there???? Thank God he is ok! I'm sure you were worried.
Beautiful wine rack! Looks great next to those wonderous cookies for fuel!!
LOVE World Market. :) Retail therapy...often works. Better than stuffing face therapy anyways for me. :) I'll be keeping Christchurch in my thoughts.
Your fuel cookies look to die for. YAY FOR RETAIL THERAPY!!! Best therapy there is (besides running of course). You got a killer deal and it looks so good with your table. I want a toaster oven too....I think that will be my next purchase. I love trying to be just like you! Have an amazing day!!
That's a gorgeous wine rack! I love the flavors in those cookies, I never would have thought of those together but they sound super yummy. Wednesdays are always the worst, I hate them, every week it just seems like it should be Friday and it's only Wednesday...
I'm so glad your fam is all ok how scary!
Those cookies sound amazing
Love retail therapy I swear it solves all problem. Minus your bank account but looks like you got great deals!
SO SO SO glad that your family is ok! That is good news. It is such a tragedy about the earth quake :(
And those cookies look SO very good! I love how you always break down the different & ingredients & why they are beneficial- you rock! :)
Girl, that is quite the mixture of necessary bike-riding (or long running) ingredients! Love the added info :) are the bananas and pineapple both dried??
Those cookies looks delishhhh. I love tropical flavour things, so I must make these STAT!
What's working for me? My new posting schedule. ;) And consignment shopping.
Love the new wine rack!
I will definitely be praying for those in the earthquake and their families! I'm glad ya'lls made it safely :-) Those power cookies will be somthing that I might have to make to take on my long runs!
LOVE the wine rack.... very classy look!! I hope you put your feet up and treat yourself to a glass :)
Aren't toaster ovens great? we love ours.. yours is really nice though.. ours is old and ghetto but i'm okay with that because it still works haha
That's just awful what happened in NZ.. i will definitely keep them all in my thoughts and prayers.
just came across your blog and i love it :) so cute! those look amazing! i love the wine rack too! soo elegant! xo
I saw a picture of when the earthquake hit today; it was appalling. So glad your husband's family is ok x
Love the look of these cookies too :-)
I love love love these! They look so delicious! And definitely full of fuel... maybe a little heavy on the sweet dried fruit but well worth the try! Damn, they do look yummy!
p.s. retail therapy is ALWAYS good.
Praying for the NZ-ers!
The fuel cookies look awesome...my problem with things like that is that I can't stop eating them once I start :)
Today....what worked for me was that I spent 4 really satisfying hours wellness coaching, and one hour personal training...and it all felt productive (which doesn't always happen!). I also made socca for the first time, and I looooooved it!
Hope you're doing great :)
I'm so glad all the extended Cotters are safe! My Kiwi connections haven't been so lucky, unfortunately. Such a sad week. :(
I absolutely pray at the altar of the toaster oven! During my whole PhD, I lived in a place without an oven, and I came to be quite the baker in spite of it---I can do *anything* in the toaster oven, as long as the pan fits! It's also great if it's hot out (or living in a hot climate) because you don't heat the whole kitchen up, and it saves lots on energy, too. Go, team Toaster Oven!
Oh...the incredible toaster oven! I really need another gadget! And a foreman grill too =D
Sorry about the quake in NZ. Hope that all are ok. Prayers going out!
Oh man, I love World Market! Very cool toaster oven, I've never seen one with a toaster too, trick.
Glad to hear his family is safe! I will definitely keep them in my thoughts and prayers!
What a cool & apart toaster! I am happy to hear that his faily are all okey!! These energy cookies look delightful & ooh so tasty & apart too! Very special flavoured cookies!
Thank Heather. My poor husband was worried sick about his family. Good thing for
Skype!! Let me know if you try these out.
Cheers!
