What's Working Wednesday

Happy Mid Week. Anyone else not too fond of the word “hump” day? Maybe its just me. Anyway, today has been a good day. I think its because I’m still trying to keep that FOCUS, and keep it POSITIVE. It’s funny, because even the small things are making my day. And with that in mind, I thought I'd post a “what’s working Wednesday.” Anne Marie does this on her blog and I absolutely LOVE IT!!

What’s Working is…………


First of all, a little retail therapy from World Market

My new Wine Rack!! I love it!! Got it for $50 marked down from $199. Now that’s a steal! World Market, you just made my week.

Secondly, good products! Thanks to CSN Kitchenware for a fabulous find. How did I go without a toaster oven for so long?

This one has a built in Toaster and it fits perfectly I my tiny kitchen. I am seriously obsessed. Now I can make a yummy breakfast in NO TIME! Yes, those are my Udi’s bagels! hehe.

And last but not least, more FUEL COOKIES!! The hubs really liked my first batch with his 4+ hour ride, so I decided to make another round, different Flavor of course.

(GF) Banana Pineapple & Pretzel

Fuel Cookies

Lets call them BPP Fuel Cookies for short. Mmmmm k?

Ingredients and More:
  • 1/2 lb. bag of dried pineapple rings (equivalent to about 8-10 dried rings)- Natural sugars/carbohydrates used for quick ENERGY and restoring glycogen.
  • 1 serving protein (30grms)- I used Jay Robb Pina Colada. You can use vanilla as well. – protein to support muscles.
  • 2 tbsp Nuttzo. If you don't have Nuttzo, use 2 tbsp chunky nut butter – Good source of fat for slow release energy.
  • 3 heaping tbsp crushed banana chips- potassium rich natural energy.
  • 1 tbsp chia seed and 1 tsp flax seeds.- Chia seeds are contain a good source of omega-3 and omega-6 fatty acids. They are also rich in fiber, protein, amino acids, antioxidants, and a lots of different nutrients, (including calcium, B vitamins, zinc, boron, potassium, copper and phosphorus).Check out THIS article for how they effect glycogen storage.
  • 1 tbsp honey-
  • vanilla extract or vanilla stevia.
  • 1 handful crushed GF pretzels- gluten free carbs for energy
Directions: Place pineapple rings in food processor, blend until it makes one big batter (thick and sticky). Transfer into bowl and add in remaining ingredients. Mix with hands (yes, I am classy like that). Roll into balls and flatten with hand into cookies. Place on wax paper and store in freezer. Makes around 16-18 cookies.
Nutrition Facts Per Cookie: Calories  63.2 Fat 1.6 g Sodium42.9 mg Potassium 39.6 mg Carbohydrate 10.5 g Fiber 1.0 g Sugars 7.7 g Protein 2 g


So there you have it. This is WHATS WORKING WEDNESDAY! I’d rather not going into what’s not working. I’m on a high here. haha!

My husband is from Christchurch, New Zealand. They were struck with a major earthquake on Monday. Our family is all safe (thank you GOD), but there are many other people hurt and lots of damage done. Please keep them in your thoughts and prayers.

Love this post! Every word. And your new wine rack is fabulous. I love stemless wine glasses, too! (Less risk of breaking them - haha.) Billy was adamant about us registering for a toaster oven and we love ours! Use it all the time. I still haven't tried the Udi's bagels - need to pick some up. But, it's been almost a month GF and I'm loving it. Apparently, I'm LOVING a lot of things in this comment. And I'm with you - I do NOT love the term "hump day" - don't even like typing it just then.

Very glad to hear that the hub's family is safe, and prayers out to all affected in any regard.

Wonderfully working: 1st swim back now that the HS kids have left the pool (mm... all 8 lanes to myself...too bad I couldn't clone myself and really get a work out in! ;-); little nephew is visiting and I get to see him on Fri/Sat (will I ever make it til then?? :-); made nephew's b-day gift in school today and my students commented, "oh...that's cool.... " and they meant it! :-); had a nice impromptu meeting with the round of principals (all three, all different times); have managed to not eat all of the homemade granola bars (success!).

There's more, but that's good for now! :-)

Oh.. one more.. feeling a twinge more comfy and accepting of the life change decisions... always appreciated!

World market is one of my favorite stores they have the cutest kitchens stuff and best wine selection, we dont have one here so when I visit my parents its always on my list of places to go.. cookies look yummy as well I havent baked in awhile but as soon as I do im making those and your fuel cookies :)

Those cookies sound so fun! What's working wed was great for me - I had my best & fastest run in a while. The earthquake is pretty terrible, I have a friend from New Zealand that spent last summer counseling with me at a summer camp, and she is thankfully okay, but she was pretty upset when I was able to talk to her yesterday.

Praying for the NZ-ers!
The fuel cookies look awesome...my problem with things like that is that I can't stop eating them once I start :)
Today....what worked for me was that I spent 4 really satisfying hours wellness coaching, and one hour personal training...and it all felt productive (which doesn't always happen!). I also made socca for the first time, and I looooooved it!

I absolutely pray at the altar of the toaster oven! During my whole PhD, I lived in a place without an oven, and I came to be quite the baker in spite of it---I can do *anything* in the toaster oven, as long as the pan fits! It's also great if it's hot out (or living in a hot climate) because you don't heat the whole kitchen up, and it saves lots on energy, too. Go, team Toaster Oven!

My husband is from Christchurch. A lot of his family is still there. My mother
in law as well! Luckily no one was hurt. Just lots of damage. My husband was
actually on the phone with her when it happened. So scary!!

I know! the pretzel is my favorite part. hehe. I used both dried banana and
dried pineapple. The banana is unsweentened and the pineapple is sweetened with
a little cane sugar.

 I think I'll try them out on my long run this weekend.

oh I am so sorry to hear. Its been a very scary week. Just spoke with my mother
in law last night again, very surreal. Thanking God that she is alright.

My new toaster oven is my altar for SURE! A Godsend. Seriously, how did I not
have this before? How's the fitting in workouts? That focus? I hope its still
going strong.
