Blogger Bandwagon Weekend

Alright, so I confess. I jumped the bandwagon. You see, the hubs was away this weekend so that left me with three things that I like to do why flying solo.
  1. Catch up on work, clean, and bake like crazy so that he returns with lots of good food at hand.
  2. Spend some “me” time watching chick flicks, a little yoga, and/or grabbing coffee with a friend. Mel, you better be free later!
  3. Catch up on blogs, TO DIE FOR bandwagon recipes, and just plain dilly dallying.
So let’s go ahead and skip to #3!
The bandwagon recipe...SOCCA! Thanks to the lovely Twins, I got my Socca making skills on.
The first time around I kept it simple. Chickpea flour, a little salt, a little GF Brewers Yeast, and a little peanut flour.

Can you tell I liked it? Oh heavens YES! The bad news is I’m not sure I will be able to save any for the hubs. Guess that means there should be a round 2 of Socca making. Maybe THIS RECIPE from the TWINS will be next!

Lets continue down the blogger bandwagon weekend, shall we? Speedy Matt from THE ATHLETE’s PLATE tagged me in the Seven Blog awards. What perfect timing! It’s the weekend, I got more time. I’m gonna do it!

So here goes nothing. Lets see if you can pay attention here.

  1. I’m have a slight obsession with condiments. I almost need a whole separate plate just for them at dinner. Here’s my favorite!OLYMPUS DIGITAL CAMERA
  2. I like small fruits only. Small apples, small banana, small mangoes, kiwi, plums, apricots. I think it’s the “cute” factor.
  3. The Hubs played the “accent” card when I first met him and I totally fell for it. He’s from New Zealand. Nowadays, the accent is gone. Hmmm…….funny how that works.
  4. We have 10 different jars of nut butters in our house. The hubs and I keep a specific spare spoon out right by the jars so we can grab some throughout the day. Don’t worry, we clean it every time. It’s our own Nut Butter spoon!
  5. We want to move back to New Zealand. I’m hoping we get to do that this next year!
  6. I own a small business call HEALTHY BITES. It’s just a local operation right now but I make gluten free snack balls/bites. I started doing this two years ago when the hubs needed better fuel/recovery options for his training. The gluten filled processed bars did not leave him feeling great on and after hard training sessions. Maybe some day I’ll share more about Healthy Bites on the blog. For now, if you’re in Austin, feel free to check out Facebook for orders!
  7. I pray when I run outside. No iPod, just me and God. Let’s just say he’s gotten an earful lately when I’m out on  my long runs. hehe!
Okay, I would tag a few people but I’m sure everyone has already done this. Either way, jump on the bandwagon and do it yourself if you have not. I’d love to learn more random facts about ya!

the first time I made socca I ate it all before Jason got home... I had to make more that night, and between that and my spinach pancakes, that is our "bread" all the time! :)

oh, wow! I think I like your #7 the best... I never have iPod for outdoor runs, because it's my "process time"... I've had many conversations with God.

My favorite on this list? That you pray when you run - I think that is just so cool. It's the perfect time for it too...just you and your thoughts and your breath. Love that. Also - random that you "only" like small fruits. You are so random!!

You know, in the last video you posted of the hubs, I was super excited to get to hear his accent and then totally bummed (and confused) when I realized he didn't have one! What's the deal? Guys with accents are so schmexy! Lol

I did 1 cup flour, 2 each tbsp brewers yeast/ peanut flour, and then a little
over 1 1/2 cup water. Came out a little thin but I was going for a thinner
crust. Let me know if you try it!

I almost died without your blog this weekend!!! That socca looks amazing! Ketchup should be added to every food item possible. I will seriously come visit you when you move to New Zealand...I hope you are okay with that! 10 nut butter jars=heaven. Praying while running is the best. This weekend was the opposite for me though.....I was cursing ha, that is probably why I didn't do so well. Just want you to know that I am addicted to you and your blog and that you are the most gorgeous thing ever.

So, I have to admit, I like small fruit too- haha- I think it really is the cute factor :) & I do that with nut butter spoons too!! Craig always laughs at my habit of just randomly walking in the kitchen to grab a spoonful of peanut butter...but, I can't get enough of it! :)
I love that you pray when you run outside! I think it's such a nice time to just have 'you & God' time- I also do that when I'm outside. I used to ALWAYS run with my ipod, but now I can enjoy nature & just thinking about life.

I've got to admit, I had never heard of Socca and will have to do a bit of reading to figure it out.

Back to NZ?! So exciting for you and James. Glad for the blogging world though to make new friends and stay in touch even when distance doesn't make it possible to stay close.

I owe you an email back too on how I incorporate some of that core and glute stuff...I haven't forgotten. This is the first I have been on the actual computer in 3 days! It's been a nice little break from the big tech gadgets even though I have still been using my phone for Facebook and twitter!
