Well I am happy to say that the hubs is home safe and sound and now I can actually sleep through the night. I don't know what happened to me. When I was single living alone, I had no problem staying by myself. Not a worry in the world. Now, I am such a weeny!! I dead bolt all the doors and try not watch all my favorite crime shows. I know my bud ABBY can relate. Does anyone else do this? Women that is.
Anyway, after a much needed store run, I came home with this product.
Yes, I know, I've jumped on the food blogger bandwagon. Just like OIAJ, green monsters, overnight oats, and yada yada yada. But I just had to see if this gluten free, soy free, dairy free cheese actually melted and tasted good!
So it was time to put it to the test with my Cotter Curry Mash.
Cotter Curry Mash
1.5 cups cooked brown rice/wild rice pilaf
1 cup butternut squash puree
diced celery
1 tsp minced garlic
black pepper and sea salt-to taste
curry powder (we like a lot but this depends on your preference)
3/4 cup diced apple smoked chicken sausage (vegans could use tempeh as well)
1/2 cup DAIYA mozzarella
Directions-
Cook your chicken sausage first and then set aside. Then cook the rice as directed and right before your rice is fully cooked add in the rest of your ingredients. Let it sit on medium heat until celery is cooked and cheese is melted. Doesn't take very long.
Add any other additional seasonings (like more curry, haha.) and enjoy! I served it with a big brown rice tortilla and side salad.
Oh and guess what.....DAIYA was AWESOME! Melted perfectly and oh so creamy!! I know many of you have used DAIYA before. Do share your creations.
Well, its Glee time! Poor hubs has to sit through it.

I don't really get terribly freaked out about staying alone, but I definitely make sure to set the alarm. I think jumping on the Daiya bandwagon is a-ok. YUM. That is one trend I am so happy that I tried.
I live alone, but I can defifnitely get myself freaked out- especially when I'm house sitting/new apartment.
No Daiya in Canada, I need to jump on the bandwagon for overnight oats and green monsters.
And Glee...I was a little disappointed after all the hype!
I understand the locking the deadbolts. I do the same thing, but I sleep with the hall lights on, I figure if someone is going to break in I want to see them. I don't refrain from my horror movies though. Its the only time I can watch them on the big tv:)
That sounds great- I made a similar receipe last night- thin sliced sweet potatoes boiled, then drained and mixed with a cheese sauce of almond milk and low fat cheese. It came out so good; I'll post some pictures tomorrow!
I dont get freaked out, but I tunn on the tv to make me feel like someone else is with me, like Jon stewart! It doesn't hurt I have a small crush on him
it's funny, i'm not freaked out by myself in my apt, but when i go back home and find myself i get a little spooked and don't know why! maybe it's b/c the space is so much bigger :) never tried daiya, i'll have to remember that one...
Loving your recipes this week! As soon as I get home, I'm going to pick up Shirataki noodles AND Daiya. It's hard to believe I haven't tried it since cutting dairy out of my diet a long time ago...I guess it goes to show I don't miss cheese that much...? Anyway, this recipe looks hearty and perfect for cooler temps. I'm a total weenie when home alone and just like you, I used to have no problem at all when I was single!
I don't live alone but when I am home alone I always lock the doors and am paranoid too! I'm such a light sleeper too so every little noise wakes me up!
I've seen the Daiya at Sprouts but I haven't tried it yet. I didn't realize until looking closer at the picture in your post that it is soy free. How is the protein?
I've jumped on a lot of bandwagons myself including; Amazing Grass, homemade nut butters, maca, and coconut water.
I need to find that "cheese"! It looks so dang good and so does your recipe!!!
OMG i am a nut. I turn on all the lights and then wake up to every little noise. We have squirrels on the roof and i swear they are in the bedroom:) NUT CASE= ME.

Ahhh I am a scaredy-cat!!! I soetimes sleep with the lights on..or I don't sleep at all! I'm a big baby! I don't know how I lived by myself between marriage + college... Oh, wait...that's why I got Dexter... and now he's a bigger baby than me!!!
I have heard great things about Daiya cheese. I am glad you liked it as well, I may just have to jump off my Raw wagon and give it a try too :D

HAHA, I'm a big weanie, too! I can't stand when my Hubbs is not lying next to me at night, either! He's my protector and I can sleep peacefully knowing he's there next to me:) It's a great feeling! I've also seen way too many scary movies (stupid, stupid, stupid) and it messes with my head when I hear little noises (which don't bother me at all during the day, just at night). Sigh.
im the only food blogger and vegan food blogger whos never even tried daiya...i should tho! I just dont even miss cheese but you've got me reconsidering that...
