Worrisome Weekend

Hi. My name is Lindsay and I am a worrywart. I get this from my mother (thanks mom! I still love you though!). Whats funny is that I never worry about the big things, just the small petty things. Like when the hubs is off racing for the weekend, I worry if he's getting enough rest and enough food, if he remembered everything, and what will I do if the stupid smoke alarm keep going off and i can't fix it?!?! That always seems to happen when he leaves, I think its rigged. Anyway, what do I do channel out this annoying habit? I bake, work on house projects, get caught up on work, venture out to new bakeries/cafes, brew another batch of kombucha, and catch up with long distance friends! Basically anything to take my mind off those small worrywarts.

DISTRACTION# 1
Breaking out the dehydrator.....why?......cause I have time!!


PB and Banana Chia Chips
(adapted from this recipe)

Ingredients

4 tablespoons chia seeds
1 cup water 1 bananas, very ripe
1/4 teaspoon salt
1/2 teaspoon cinnamon
2 tbsp PB flour or PB2 flour
Stevia
1 tsp vanilla extract(optional)

Directions
Combine ingredients in blender and process until smooth.
Allow to sit for about 20 minutes until mixture begins to gel.
Spread mixture about 1/8 in thick on parchment paper.
Dehydrate at 145F for about 6 hours, or until fruit-leather-like consistency is achieved.

Carefully peel from parchment and slice into cracker-sized pieces.
Return to dehydrator for an additional 6 hours, or until crispy.

Place in a Ziploc with some extra cinnamon and stevia. Shake it up to coat the chips again. Enjoy!


**NOTE: You can also use the oven (instead o a dehydrator). Set the oven door slightly open and place on lowest temperature (160-170F) for 8-10 hours.
These were tasty little snack. Great for dipping in Greek yogurt or cottage cheese!

DISTRACTION #2
Meeting up with old friends! My good friend Kristen moved to LA LA land with her hubs 2 years ago and just had her first baby. Today I got to see her in Austin with her sweet baby boy.

A good catch up it was! Care-free and full of laughter, just like old times! Just wish she would move back to Austin, boo.

DISTRACTION #3
I finally got a chance to try out  another one of Austin's raw cafes. Picked up a little "raw" snack when I was downtown. Anyone wanna guess what this dish is?

All I know is that it made my tummy very happy! I must try to re-create this.

Well, I should be doing laundry now but for some reason I'm sucked into Desperate Housewives. Bye Bye Sunday night!
