DISTRACTION# 1
Breaking out the dehydrator.....why?......cause I have time!!
(adapted from this recipe)
Ingredients
4 tablespoons chia seeds
1 cup water 1 bananas, very ripe
1/4 teaspoon salt
1/2 teaspoon cinnamon
2 tbsp PB flour or PB2 flour
Stevia
1 tsp vanilla extract(optional)
Directions
Combine ingredients in blender and process until smooth.
Allow to sit for about 20 minutes until mixture begins to gel.
Spread mixture about 1/8 in thick on parchment paper.
Dehydrate at 145F for about 6 hours, or until fruit-leather-like consistency is achieved.
Carefully peel from parchment and slice into cracker-sized pieces.
Return to dehydrator for an additional 6 hours, or until crispy.
Place in a Ziploc with some extra cinnamon and stevia. Shake it up to coat the chips again. Enjoy!
These were tasty little snack. Great for dipping in Greek yogurt or cottage cheese!
DISTRACTION #2
Meeting up with old friends! My good friend Kristen moved to LA LA land with her hubs 2 years ago and just had her first baby. Today I got to see her in Austin with her sweet baby boy.
A good catch up it was! Care-free and full of laughter, just like old times! Just wish she would move back to Austin, boo.
DISTRACTION #3
I finally got a chance to try out another one of Austin's raw cafes. Picked up a little "raw" snack when I was downtown. Anyone wanna guess what this dish is?

Well, I should be doing laundry now but for some reason I'm sucked into Desperate Housewives. Bye Bye Sunday night!
Are you a worrywart? What do you do to take your mind off things? (mom, you can't answer! haha!)
Cheers,
LC
P.S.
This is till my favorite raw bar/juice bar thus far in Austin. They seriously are the best!

AH! I am so jealous of your raw eats! I've never been to a raw restaurant! I saw your tweet about the peanut flour and bananas in the dehydrator. Sounds like a dream meant for some chocolate ;) Hope you had a great weekend!!
lindsay,
peanut flour, banana and chia seeds= sheer briliance. much love to that recipe! not so much love to sketchy dish of raw?? unidentifiable something...you will tell us what that is??
and the smoke alarm thing made me laugh because it reminded me of the Friends episode with Phoebe and the fire alarm...(I sure hope you know that refernce!)
Bre,
I am SO PHOEBE!! I smashed that thing so many times and it kept going off. Funny now, but not at 3am!! haha.
Ok, now I want a dehydrator!! I worry too, but about big things! LIke car accidents and freak things happening. I don't really share any of those worries with people because it's just the DEVIL trying to get under my skin, but I still worry!! I don't go to sleep at night if Dave isn't home... I just can't get my mind to shut off!!
love, love friend hook ups;-) my BFFF also lives in LA and i just love everytime we connect;)
I'm dying to try the raw & vegan restaurants in town, there are SO many more options than in Phoenix! And perfect timing with this recipe.. I've been wanting to experiment with my dehydrator but didn't know what to do.. I'd just cut up figs to dry, so I whipped these chips up too, except substituted pumpkin for banana.. letcha know how they turn out!
I am a total worrywart too. And ironically enough, it comes from my mom as well :) I love all your distractions...especially the dehydrated banana chips!
Those chips look good! I was wondering what you were going to make when I saw you Tweet those ingredients the other day.
How did James do today?
those chips look amazing!!! totally need a dehydrator :) hope hubs did well and there was nothing to worry about!
Haha for the fire alarm thing, LOL
Glad you enjoyed time with your friend, isn't meeting friends therapeutic?!
I haven't watched the new episode of Desperate Housewives yet... love that show! ;)
Oh man I am such a worrier too. I worry when the hubs just goes out on a bike ride let alone a race! Loving those crisps by the way. yummy.
sorry to come back in comment, but i didn't see an email--have you made injera?? I've totally been wanting to try it, do you have a recipe??
(tri2cook [at] gmail [dot] com) thanks! :)
I love Daily Juice! I buy their Kale Chips allllll the time at Whole Foods (I'm in Dallas) but I will have to stop in Austin on my way to San Marcos in November :)
Oh my your raw snack looks spectacular. It looks like there is some kind of sea vegetable in there, and maybe kelp noodles as well? Let us know if you recreate it! Hopefully you were able to relax with a glass of vino.
oooh what wonderful distractions indeed!!!
I've missed reading your blog! I'm a total worry-wart and also got it from my mom! Billy is a good influence on me but I can worry out of control when left alone. Haha. If we end up moving to Austin, I'll come keep you coming while your hubs is out of town. :)
Yay for time. Yay for a dehydrator! My kitchen is woefully small or I would love to fill it with more toys, so i could make kale chips and your goodies and experimennnttt. All the eats look so wholesome and yum as always.
