Garlic Sauteed Oysters in Wakame Brown Rice noodles w/ Spinach, Tomato, & Goat Cheese
I used a can of raw oysters. I first sauteed them in a little olive oil with garlic. Then add in lots of spinach and 1 cup cherry tomatoes. It will make a nice little sauce once fully cooked. Cook the noodles according to the package.
These noodles usually take less than 10 minutes. They are quick and easy and delicious. Throw them back in the pot after draining and add a little butter or olive oil. Add a few dashes of black pepper and sea salt. Serve up your pasta and add your iron rich topping. I sprinkles some goat cheese on top. What can I say, I'm in a goat cheese phase. haha!

oysters? oh boy...I love your recipes & I think you are wonderful but I'm not so sure how I feel about oysters. I can't say I've ever eaten them--what other seafood are they similar too?

Ooohhh, interesting!! I'm not an oyster kind of girl BUT I do love a healthy noodle. I'll have to look for those suckers.
OMG - I need to find those noodles. YUM. I love love love wakame. I am so with you on using a ton of spinach. I go through an entire bag by myself in a week. The hubs just better get his own ;-) And goat cheese goes well on anything I think. So when are you planning a trip to AR????

wakame seaweed is AWESOME! i love how theyve got ones mixed in with brown rice for a nice pasta alternative.. plus its a nice change from the usual spinach pasta i see everywhere. damn this looks delicious!!!

hahah! actually, I rarely eat them, but I DID learn how to shuck oysters in culinary school. Needless to say I SUCKED at it! LOL
