GF PB FB


Its Tuesday, all day I was thinking its Wednesday. I guess its just been a really long day, haha. Dealing jury duty people has been awful. The person I spoke to is not very compassionate but I guess she used to people like me trying to "get out of it." Its like the people who work at the DMV. They may not be the friendliest, but I won't blame them. haha.


Okay, moving onto a happier note........

So yesterday I was making a ton of Healthy Bites for orders this week and after i finished I had a ton of left over ingredients. You know, 1/4c flour here, 1 to 2 tbsp of nut butter there, 1 egg left in the fridge, etc. I hate just having bits an pieces of ingredients left and then having to buy a whole other package of it. I am a very resourceful person so I must use EVERY LAST DROP first. I came up with this concoctions left over from my pantry binge.

GLUTEN FREE (GF) PANTRY BINGE (PB) FUDGE-ish BROWNIES (FB)

Yes, the title is very long. Thats why I did the letters only. Plus I am a sucker for abbreviations. haha. But don't let the title mislead you. These are gluten free but fudge they are NOT. I used ingredients that made the batch a fudge-like texture inside and then brownie crust outside. It was amazing. Not sure how I did it, but I'll take that!

Ingredients:
- 1/2 cup peanut flour (I'm guessing you could use almond meal or coconut flour instead).
- 1/2 cup Amaranth Flour
- 1 egg
- 1 tbsp omega or flax oil
- 1 stevia in the raw packet
- 1 tsp baking powder
- 1tbsp honey
- 1 tsp vanilla
- 1 tbsp coconut peanut butter (or other nut butter)
- 1 to 2 tbsp 100% Cocoa
- 1 tbsp sugar free chocolate pudding (optional- another left over ingredient)
- 3/4 cup applesauce
- 4oz Unsweetened Vanilla almond Milk
Told you it was A LOT of left over ingredients!!

Directions:
Mix wet and dry ingredients separately then combine in a large bowl. Fill into small baking pan and bake at 350F for 20 minutes or so. The top will we crispy so be sure to check the middle so its not too doughy.
Makes around 15 to 16 small brownies.

When I ran the nutrition info, I was actually surprised at the stats.


Calories 75.3 Fat 3.3 g Sat. Fat 0.7 g Carbohydrate 8.9 g Fiber 1.3 g Sugars 3.1 g Protein 3.1 g
Not bad for a pantry cleanse, eh?

And speaking of pantry binge, that night I decided to tackle the freezer and fridge. I call this dinner the....
"GLOBAL PLATE."
Steamed Brussel Sprouts, Baked Greek Olive Haddock, and Herbs de Provence Potato wedges. A little Belgium, a little Greece, and a little France all wrapped up in one.
Delicious!
Okay, my pantry and fridge are bare so now its time for a trip to Whole Foods and Sprouts tomorrow. YEA!! Time to restock.
