Kabocha Virgin

Yes, I admit. I am  WAS a Kabocha Squash Virgin. Since reading blogs from these lovely ladies- April, HEAB, & Alyson's, I have a found a new love for Kabocha and its versatile style. LOVE IT. So tonight I steamed and baked the squash for two different meals. For the steamed version, I used with Salmon and baby bok choy- YUMMY DINNER. (sorry for the crummy pics from my blackberry....camera is DEAD).


Tomorrow I will blend my baked Kabocha to use for our Easter pancakes. I think I'll try Alyson's Kabocha pancakes.

Kabocha Protein Pancake


1.5 scoops Cake Batter Protein Powder ( I only have Vanilla)

100 g Kabocha

1/4 c Egg Whites

1/8 tsp Cream of Tartar

1/4 c H20

Topping Options: WF Maple Syrup, Nut Pieces, Coconut, Coconut Butter, Nut Butter

If the Kabocha is cold, reheat in the microwave for ~1 minute, then purree in a food processor or blender. Mix all ingredients together on medium speed. Cook stovetop like a regular pancake.
I get giddy just thinking about it! haha! I'll post the outcome pic tomorrow. Lets hope it looks and tastes just as good as Alyson's.

SSSOOOO glad you liked it!!! It's one of my favorites! I love that it is so dense and has a pumpkin-like flavor. HAPPY EASTER!
