Travel Tales and Tamales

Let me just tell you, I married one patient man! If I were in his shoes, I would have thrown a fit already. What for? Let me tell you. Sit back and let me tell you a little story……

You see, we have been VERY fortunate with travel these days. The hubs has had some help with travel accommodations and it has saved us TONS! It has also allowed me to go to a few races as well! And trust me, I am very very thankful to be able to watch/support him. Anyway, back to my story……

Yesterday I took the hubs to the airport for a 6am flight. He has a race this weekend in Portland and its always good to leave a few days early (I am actually leaving today to meet him, yea!). So I drop him off at 5am and moments later I get a call. Not only had his flight been canceled, but they decided to charge him $200 each way for his bike box. WHOA! Now that’s more than my ticket alone. Sheesh!

Looks like the bike might take priority over the wife. Hmmmm, I guess I can’t argue there, right? I provide the food and cheering during race weekend but the bike is kinda crucial. Plus, he does look pretty hot with that bike, right? Winking smile

Oh, and about that canceled flight…….he finally caught another flight later……at 6PM! A good 12 hours later! I think  I would have gone insane. But not the hubs, he said he played on his phone and slept, all at the airport. Such a man! haha.

My worst travel experience? I think I got the hubs beat. I was stuck in South Africa for a week due to an airline strike. . This was actually 5 years ago on mission trip. Lets just say our mission was not so much complete….haha.

okay okay, lets end with something good, like food! With the hubs being gone last night I decided to whip up something fast and easy. I also needed to get rid of some ingredients in the fridge before I left (cheese, leftover tamales, etc). I decided to go with the tamale bake I made last week. I think a few of you asked about it, so here it is.

And yes, I cheated, its not from scratch.

Tamale Bake for One

Ingredients:
  • 1 or 2 black bean tamales (husked removed)
  • 1/4 cup corn and tomato salad mix
  • 1 tsp garlic
  • 1 tsp cumin
  • 1 tsp black pepper
  • 1/4 cup diced bell pepper (I cooked them a little in cumin before hand)
  • 1/4 cup cheese ( daiya melts well if you are going for dairy free)
  • jalapenos (sliced)- optional
  • 1 or 2 medium sized corn tortillas. Can use flour if you are not worried about gluten
  • Toppings- avocado salsa or fresh avocado and salsa
Directions:
Keep tamales at room temp. Set aside. Preheat oven to 400F. Mix corn, peppers, seasoning, and jalapenos. Place into one or two corn tortillas along with tamales and cheese. Roll up tightly. You might have to pin the side down with toothpicks or something. Bake in baking dish for 10-15 minutes or until the tortilla is browned and cheese in melted inside. Top with avocado or salsa.
Dig in!


Alright, about time I board this flight. Looking forward to the cool  Portland air and supporting the hubs! I have a feeling this will be my last time to travel with him to a race. Unless, I fit in the bike box. Winking smile

James, I cannot even begin to imagine what you would do in an airport for TWELVE hours! Ha, wow. Linds, hope you don't have the same experience today - have a safe flight and enjoy the Northwest!

My "worst" travel stories don't seem so bad now, haha. I just spent a lot of time in airports while I was in college - flying back n' forth across the country while Everyone else was too (i.e. holidays)! Never fun, never smooth, never without delays or some sort of bump in the trip.

Ugh.  I would have freaked spending 12 hours waiting for a flight.  I hope the airline gave him some good vouchers or something.

I read his tweet about packing his bike with his pedal on it.  I don't feel so bad about not being able to get my pedals off now.

There is no way on earth I could have been that patient. Not a chance LOL. I hope you have better travel luck!!! And if the treats were GF you could totally eat them. I have taste-tested plenty ;-)

Wow. Uh yeah I would have LOST IT! I hate the feeling of being trapped, although I do enjoy people watching at the airport. The bike.. I've always wondered what it costs to ship your bike.

I swear the airline industry TRIES to make traveling as painful and frustrating as possible. Kudos to the hubs, I would have been a complete wreck. 

girlfriend, I will pay you to whip out more single serving recipe. Party of one over here when I'm at my apartment and need some recipes to make for myself!

Wow. That is patience!!! Both of your stories! I once got stuck at the airport for SEVEN hours and thought that was rough. I missed standby on an earlier flight by ONE seat. And the worst part? The flight was only a freakin hour (from SF to Orange County) and I wanted to scream. Have a great weekend and good luck to your husband (and um, 200 bucks each way for his bike? INSANE!).

Wow! That's some crazy stuff!
We travel internationally a lot, so there are definitely stories! Once, my dad and sister left before my mom and me, went to atlanta for 11 hours, and then sao paulo for 8. Mom and I left memphis, went to miami and then sao paulo, so we met up there.
Also, once we went to visit some family in Bolivia for a long weekend. What we didn't know is that we needed yellow fever shots, which have a waiting period of 10 days. So our 3 day trip turned in to a 10 day one!

Ok -- 12 hours stuck at the airport sounds awful and waiting a week (???) to leave South Africa sounds crazy too -- but at least you got to leave, right? You weren't in the airport all the time I hope!

I am glad he got to bring his bike! :)  I don't mind airport layovers / waits that don't make me late for the next connection, or return trips. I can kill time well in the airport :))

Seriously, nerves and patience of STEEL the hubs must have!! And you for getting stuck for a WHOLE week in S. Africa?? That is ridiculous!!! I'm glad you both could see the bright side of things though, I mean really - you two are WAY better at this stuff than me. I'd be a raging lunatic! LOL

Almost all of my flight nightmare stories involve Delta.  I went out 2 years ago to cheer for friends at IM CDA. When I showed up at the airport for my 10am flight home in Spokane, they told me I'd missed my 5am flight.  Yep, they changed me to an earlier flight without telling me.  Because it was the day after hte race, everything was booked up - my ONLY option to get home was Spokane --> Minneapolis --> San Jose.  I spent the whole day flying home!

We moved around a bunch growing up, so I think that combined with a name that means "wanderer" instilled in me good and smart travel skills. 

One of the all-time best memories was when we were driving from Pittsburgh to Northern Indiana to visit my grandparents for Thanksgiving (a regular 8-hour drive known to all of us).  Mom and Dad wanted to stop in Angola (first exist inside the IN/OH border) on Weds., sleep, and complete the drive on T-giving morning.

My sis looked at me and asked, "Do you want to stop?" and I replied, "No!"  Being a bit older and more stubborn, she looked at our parents, politely demanded the keys, and told them, "Wendy and I are going to drive through.  You two get in the back and sleep." 

It only took a few minutes (and probably thanks to my parents being exhausted) before they agreed.  Sis drove and I rode shot gun.  She swapped out the music to our relief, and within 10 minutes we heard both of our parents snoring where we were once sitting.

We made it the 2-2.5 hours very efficiently and with both of us being coherent and energized.  We woke them up at the hotel, and received, "what? where are we? we're already here?" responses.  Sis and I just looked at each other and smiled slyly!

The next morning we slept in, ate a leisurely breafkast, and prepped to go the 10 minute drive to the g-parents place we heard the folks say, "Hey..this was brilliant!" almost as if to claim it for their own.  Sis grinned at me before chiming up, "Ahem!  Whose idea was this?  Thank you!" with love in her heart!

Yep, sometimes you gotta listen to the kids... :-) .. at least when they can drive and are level headed! :-)

Oh, that tamale bake looks delicious!

To answer your other question: my in-laws made dinuduan (a sort of stew) with the blood.  They bought the blood at a local asian grocery store.  It's stored in the refrigerated section, in a plastic container (kind of like a margarine container) with the world BLOOD written on it in big black letters.  If you think you want to to try it, I can ask them for the recipe, and then you can blog about it.  Ha!

Have fun in Portland...I am dying to go there!  Traveling/airlines can be hit or miss...I never really had problems before but it seems the last several times I have had crazy issues!  Its no fun!  But I think your South Africa hiccup has me beat : )  Good luck to the hubs!  Safe travels there and back!

Your hubs is a TROOPER! And so are you for that Africa trip! Wow. My worst travel experience was not even related to an airplane. When we were moving here, I drove from TX and hubs drove from MA (he got a bunch of our stuff from there that had been in storage) and so I had to drive through Wyoming. So I leave Casper, one of the whole TWO cities, thinking there will be gas stations since I have half a tank of gas....um no. I drove for SIX HOURS and my emergency-low light was on for a full HOUR as I'm driving along the only major jhighway there with my cat, no cell phone service, and nary a state trooper in sight...I literally fell out of the car on the ground and fcried when I got to a gas station. I was SO relieved.

YIKES, talk about expensive fees! 

So we all want to be comfortable when we travel right? I wore scrub-ish clothing on a flight to France, only to arrive and find out they'd lost my luggage... Granted, they got it to me three days later, but still! Trying to sight see in basically pijamas was pretty grody. :)

ahhhhhhhhhhhh. the airport is so brutal. i totally saw your tweet this am about being in slc i think?? so wish i could have just sped up there for a little meet-up. i dont have any super good traveling stories...i just have come to expect the worst unfortunately. i always fly with my pup though and it never amazes me how many people will just stick their fingers in an enclosed crate without thinking twice. haha! have a blast this weekend :) good luck to the hubs!

Have fun in Portland it should be really nice there. :)  I have had to spend the night at the airport before and that was definitely not fun.  I actually really just hate flying because it always seems to come with problems and stress. 

And you could definitely fit in the bike box. :)

Aww, what a patient guy! Have fun reuniting today.

Thankfully I don't have too many bad travel stories. The worst was probably when my dad and I went sailing and the airplane lost my luggage. They eventually got it down to the Caribbean, but we were already sailing! I had just bought a swimsuit, a pair of shorts, and a t plus some toiletries and I was good to go!

But I think for a race you'd need a lot more than that haha!

I missed Paul's graduation b/c of an electrical fire in charlotte and had to either drive an hour home in the pouring rain and come back at 3 am oooor stay in the airport the whole time. I nearly crashed drivng home. ugh. worst day. so glad its behind me!

I read today that frontier airlines carries bikes for freee!

Skiies are now considered a weapon and they usually charge around 200 for them ! UGH!!

$50. Thats still way better than $200 each way. And I had no idea skis were that

Being stuck for a week? The horror! :O

A "wonderful" travel experience of mine: I went to Venice for a school orchestra trip (20 hours or so bus ride.) We had two buses: One for the people, one for the instruments and equipment. Both were stuffed so much that everybody was squeezed into the seat and didn't have any space to move. In the middle of the Brenner Alpine pass, we got stuck for a couple of hours (due to snow or whatever.) It quickly turned out that the bus had no proper heating and was gradually getting chilly from below. Due to narrowness, we couldn't move, and we weren't allowed to get out, so we just sat there, waiting, while our feet turned into ice cubes. When we arrived in Venice, 3/4 of us had fever. Yay. :S

I hate long delays/layovers in airports!!! Someone was just telling me, though, how productive they are in airports because no one ever bothers them! Maybe I should try to use the strategy...usually I just listen to podcasts or music!

Hope your flight was fab and seamless!  Traveling by air is quite an amazing thing...and it works most of the time. When it doesn't work well...it reminds us of how great it is when it actually does!
During a strike, my luggage was lost in Philly (I was connecting there to end up in Miami on Christmas). I was lucky I was traveling alone, got onto a flight (mine was canceled). I bought a new wardrobe in Miami and the airline reimbursed me for it!  
My travel companion was fishing through piles of luggage on his connecting layover on his way home (his luggage had never showed up...mine was delivered to the hotel after 3 days)...and actually found his luggage among the suitcase mountains!

yea 12 hours, i would have been a mess..probably hurdled in the corner of the wall muttering "sooo bored..so bored" .. it's amazing how men tend to do better with having to wait for a flight.

When it comes to traveling, I'm actually pretty patient and go-with-the-flow because I like airports. :) Maybe because I feel like I grew up in them, but I love the process of traveling. Weird, I know :)

Yikes, traveling internationally is my least favorite...takes forever, and you look\feel like a total zombie.  I think a 12 hour layover I had once was bad, but I think the worst was when we had already had a 9 hour flight, but the airline didn't want to pay for a spot on the tarmac, so they kept everyone on the plane, and brought in the cleaning crew to clean around us!

Oh my gosh, what a nightmare! I have always been a traveler, and I have so many terrible travel tales. I've slept in many an airport, cried in front of many an airline employee, BUT I've also met some incredibly generous people, so I'll tell one of those stories instead. When I was in high school I was at a national fencing tournament in Ohio when I tore a muscle in my back and my leg at the same time (I know, awesome), which led to a trip to the emergency room and a big brace on my leg. I had to be wheeled around in a wheelchair at the airport and my mom was struggling with the airline to figure out where they could put me because I was unable to bend my leg at all. A wonderful guy overheard my story and ended up quietly speaking to the airline and upgrading both my mom and I to first class, where I would have plenty of leg room. It turns out he played football in college and gone through many injuries. I STILL smile when I think about that all these years later!

Wow! Yes, he is far more patient than I! Glad he went early and didn't go the day before as that would have really thrown the racing off.

Let me see, traveling from San Diego to Kansas City in a compact car with 2 little boys, one on the way and my hubby are about as exciting as my trips get! That was 7 years ago and needless to say, we fly now : )

Have a great time in Portland! That place holds a special place in my heart and I long to go back.

And you were in Zambia?? My (wealthy) friends have circled the globe a few times travelling, and their favourite place to be is Mwandi. They did some volunteer work there for a month in 2008, and just went back in May... and would spend even *more* time there if not for small details like real world demands. How fun that you were there, too!

I like James' zen---travel woes sure can suck it right out of you, eh? He needs a Kindle: easy to transport, endless opportunities for entertainment...
