Minty Fresh Friday on the Road

G’day (as the hubs would say). We’re currently driving through the back roads of Texas making our way up the panhandle to good ‘old Lubbock, TX. Be jealous, very jealous! Lots dirt, tumble weeds, and cactus. Just kidding. But there is a lot of dirt.

Lubbock is home to the great BUFFALO SPRINGS 70.3 (half ironman). I love this race. The course is ridiculously, hot, dry, and hard (well, at least that’s what the hubs says. hehe.). But the people are just fantastic and the view isn’t too shabby either.

Last year the hubs placed top 5 in this race but it came with a consequence…..

Don’t worry, after an IV and some Gatorade, he was a WHOLE NEW MAN!

This year race temps are low of 72F and high of 105F!!! Yes, 105F people. I’m thinking he’ll have to get an IV again along with 2000 other participants. EEK! I’ll be sure to bring the pedialyte too!
No joke.

But another way to we’ll cool off will be with a new flavor Healthy Bites.

Well I couldn’t get it out of my head. I wanted more!
So I made these and all my taste buds thanked me, multiple times!

Mint Chocolate Chip Cookie Bites


Ingredients:
  • 28 grams Dry milk powder (I used goats milk powder)
  • 30 grams Vanilla Protein Powder
  • 1/4 cup chocolate chips (mini chips work well)
  • 2 heaping tbsp dark chocolate peanut butter
  • 2 heaping tbsp honey or agave nectar
  • 1 tsp mint extract
Directions:
Throw everything into a bowl. Mix with hands and roll into balls. Store in fridge or freezer and enjoy!
Makes around 15-16 bites.

Yay for Texas races!!! I grew up in Texas and the summer's are always killer. Dry heat gets ya every time. Good luck at the race today Cotters!

Wow, I always knew triathletes were hardcore but I never realised just how hard the pros have to push themselves...it makes sense, as I know that marathon elites will absolutely run to the point of death essentially...it just never sunk in about top triathletes until now!  I hope your husband takes care and has a fab race.

We don't 'do' hot weather in the North East of England, but I'd never say no to a green smoothie as a method of cooling down.  A glass of rice milk, chilled, is always nice too :)

Good luck to you hubby!!  I cannot even imagine running in that kind of heat.  I got dehydrated in 65 degree heat, you Texans are hardcore. :)

Those bites look delicious and if they taste anything like mint chocolate chip icecream I will love them without a doubt.  Travel safe my friend. :)

they are SO awesome - a bunch of vitamins, minerals and even aminos! he puts the iv in my arm and hands me the big needle, it's an "iv push" and I just slowly push the needle for about 20 minutes. I've been doing them for long enough that I push myself (sometimes in 10 minutes, eek!) and have even taken the iv out, although I don't like that part. ;)  gives me AWESOME energy and the vitamins are better absorbed.

that hot. Really, it is intense. I could never do it.

105 °F?!?!?! That's some crazy heat! :O I so much love how much you always stand behind your husband! If I am to marry one day, I want to do the same for mine. (But he'd had to be a researcher in psychology so we cold go to congresses together. :D)

Those healthy bites look delish!!  I love freezing gatorade or powerade and taking it out in the heat with me.  That way it stays icey for a little while depending on how hot it is.

I hope hubs stays healthy this time around!  I'd want to take a bath in that ice cream if I was running in 105 degree heat!

In extreme heat I try to find a pond or lake to swim in -- if that's not available, I take a cold bath.

I am definitely going to be making these healthy bites!  Mint chocolate chip ice cream has been a favorite of mine for forever!  I hope he doesn't have dehydration!  I understand the dry weather in lubbock, thats where I was born and raised! haha have fun this weekend in my old stomping grounds and good luck to the hubs!!!!!
