The Sweet Side of Corny

I know what your thinking… “oh boy, not another corny/mushy post from that Cotter.” Well, have no fear. This one is short but SWEET! I think you’ll get my drift here in a minute. Stay with me.

The past few weeks have been a crazy ride but it really made think about something, the journey. Our Journey! I feel like each year is a roll coaster ride of emotions, of trust, and of faith. But the one thing that has kept us grounded are the people we have met along the way. So many WONDERFUL and SUPPORTIVE people that we have come to build friendships with.

I’ve had the chance to meet some amazing bloggers this past year….

Britt, Dorry, and Christin just to name a few!

And the hubs has been able to meet a bunch of training buddies through all this races/training camps. Some that have ended up being really GREAT FRIENDS.

That being said, we are thankful! And how do the Cotter’s show thanks?
Through food of course!

I sent a few of these off to some of friends. I hope they know just how SWEET they are!

Pineapple Honey Rum Cornbread

Ingredients:
  • 3 cups Cornbread Mix (I used Bob Red Mills GF Cornbread mix)
  • 1 1/4 cup milk (I used almond milk)
  • 1 egg or egg replacer
  • 1 cup dried pineapple chunks
  • 2 tbsp. honey or agave nectar
  • 1/2 to 1 tsp. Rum extract
  • 1/4 tsp. almond extract (optional)
  • 1 tbsp. water (only if batter is too thick)
Directions:
Pour mix into large bowl. Add your milk and eggs, stir a little, then add in the remaining ingredients. Stir or use a mixer until batter is thoroughly mixed. Might be a little thick. Pour into 2 mini loaf pans or a 12 muffin cup pan. Place a few pineapple chunks on top of batter for decoration.

Bake at 400F for 16-20 minutes. The Muffins take less time to bake. The loaves will come out golden brown after about 18-20 minutes. Let it cool then eat up or better yet, give it to someone who you appreciate.

Yum! Food is always a GREAT way to show love and appreciation:) So are cards...but I'm always a fan of the hand made ones...or at least hand-written notes:). Even though my blog is still a baby, I am already so thankful for the awesome people I have met in the blogging community! So many people are going through the same experiences as I am, or are doing the same races, etc! I have made some new training and racing buddies, and I am ALWAYS thankful when I don't have to train alone:).

YUM! as always...your food looks super delicious :) I have met SO many amazing people this year either through races or blogging...I have literally been blown away by the friendships that I have made just in the past few months. Last week when a few of us went out together I just kept saying "how were we not friends long before now!?!" I am so grateful for each person I have met as it has made things like school or living far from home seem not too bad :)

I LOVE food. so any time I get food is a great day! I also love baking so it is fun for me to give food as well!

 So sweet :-) I love reflecting on the journey. When things seem crazy or challenging I always try to see the lesson involved and just be appreciate of it. That cornbread looks so good!!! :-)

One of the reasons that I love blogging so much is that I have already met so many amazing women and men with such uniquely fantastic qualities, and they inspire me each and every day! You of course are among that lovely bunch :)

Your bread looks delicious! I love the addition of the pineapple and the rum. It reminds me of the sailing we did we my in laws over the holidays in BVI. Let's just say that there was a lot of RUM drinking going on! :)

I LOVE your posts, mushy or not ;-) Just sayin. I don't do thank you notes or care packages hardly ever, if at all, I am ashamed to say. I SHOULD though because I know how much it would mean to receive one myself, ya know? And um, that recipe looks so good! Think it would work with fresh pineapple too?

This past year has been a real emotional roller coaster for me, so getting support from those I don't even know personally has really given me faith in the good of people.  You always have the best looking food!  I think I'd like to try this one.  I love pineapple.  I love to get thank you notes and so that's mostly what I give along with goodies.  Sometimes just a text or e-mail is enough to brighten my day!  So I try to do that too for the important people in my life.  I know that when I get a simple text from my husband it makes me smile to think that he thinks of me during his day.  Sometimes I forget that he does the very most for me out of anyone and I need to take the time to show my appreciation.  I sure do love all your thoughtful and delicious posts!

i actually really don't like getting gifts because i always feel like i have to act super excited & then it ends up looking fake!  instead, i LOVE homemade cards or heartfelt letters! 
or pineapple rum cornbread ... just saying! :)
i also love to bake for people to show my gratitude.  i love to rack my brain to think of the perfect edible good to make someone!

well you could use rum as well, thats still YUMMY! but rum extract is sold
everywhere. Go unshelter yourself!

I bet fresh pineapple would work, just use 3/4 to 1 cup milk instead. Try it out
and maybe give it to someone.....coworker, sister, etc?

I'm a big fan of FOOD of course and I think my clients know that too, because they always like to bring me healthy and sweet goodies, because they think they need to fatten me up, which is kind of funny! I've gotten pistachios, biscotti (my one client is a PRO at these), books, and fun jewelry. HA! Love my clients even though the company I work for drives me nuts!

Awww that is so sweet of you! The people that you are sending that cornbread to are so lucky to know such a wonderful couple. It sounds like a heavenly recipe, so they're twice as lucky to also be receiving that bread!
I thank my friends by baking for them, or giving them gifts that are genuine. Something that I hear them mention they adore or something related to a good time we've had. My friend's birthday was yesterday and she loves truffle oil, but she never buys it because it's so expensive. I got her a bottle of it for her birthday from a store that she introduced me to and she was soooo excited!
