Foolin’ Fuffy

You maybe be wondering about my title. And you should. No one would really understand it unless you were my immediate family.

You see, my middle brother (I have 3) has a special nickname that I call him. In fact, all of us have special nicknames. Mainly because I couldn’t pronounce my syllables when I was younger. haha!

Scott (aka Scotty Potty) is in the black, Jeff (aka Fuffy) is in the blue, and Chris (aka WooWoo) is the bald one. WooWoo, you know we refer to your baldness like everyday! Oh and me? They call me Whittle Windsay, or just Whittle for short.

All my brothers are SO SO different. I relate to them all in some way or form, and I have to admit it’s mainly through sarcasm and jokes. Hey, when you grow up with 3 older brothers, you just don’t know any different. How I got to be the least bit “feminine” still baffles me.

Anyway, Fuffy’s birthday was right around April Fools. I decided to play a little birthday joke that just might have been for his own good.

In Fuffy’s world, french fries are a vegetable and Reese's PB cups are a source of good fat (at least thats kinda true?). And salads.......well, his exact words are “ lettuce is 90% water, so why do I need to eat water when I drink water?” Haha, gotta love my brother. So for his birthday I made him his very own chocolate peanut butter cups. And guess what, they are HEALTHY! But don’t tell him that. He still thinks they are just mega sized Reese's cups.

Haha! Jokes on you FUFFY!

Chocolate Caramel Peanut Butter Cups (GF/Dairy Free)

Ingredients

  • 1 cup sugar (I used NuNaturals baking sugar)
  • 1 cup Organic peanut butter
  • 1 egg
  • 1/4 cup Caramel Chips
  • Dark Chocolate Peanut Butter (for topping)

Preparation

1. Preheat oven to 375°F. Lightly grease muffin cups or mini muffin cups and set aside. In a medium bowl, stir together the 1 cup sugar, peanut butter, caramel chips, and egg. Roll peanut butter and caramel mixture into balls; Press and flatten the PB balls into each muffin cup using your hands. Should make about 12-15 large cups or 18-20 mini cups. Then take about 1/4 cup dark chocolate pb and place it in ziploc bag. Cut the corner and use it as a frosting decorator tube. Click here for better a description. Then squeeze the Dark Chocolate PB from the tube/bag into your muffin cups. 2. Bake about 15 minutes or until edges are set and bottoms and edges are lightly browned.

We kept a few for for ourselves. In fact, they were awesome as a post run RECOVERY snack along with some milk….I mean HONEY MILK!!

Anyone else trick their friend or family members into something healthy? I know I ‘m not alone here! I remember the first time I gave my HEALTHY BITES to my nieces and nephews. I had to tell them they were cookies just to get them to try a bite. Now their hooked! Love it!

Okay my friends. Off to enjoy the rest of the weekend we have left.

These look perfect! I wouldn't say I trick others because they know that if I'm cooking for them, it's healthy. I think they all actually like that about coming over here. They are always talking about how they can't believe what they are eating is healthy. I love doing that and it makes me feel good knowing I'm feeding them well. You and your brothers are too cute! I think peanut butter and chocolate is the best combination ever known to man. Seriously! And, I LOVE making healthy treats for my family (especially my younger brother) and having them try them before telling them how good it is for them. It's so great to show someone how healthy food tastes good! Nice work :)

hahah to the trickery. i love pb cups so this dessert looks amazing to me. i've never tricked my family into anything like that. mostly because i don't cook for them. ever. hahah. BUT i did once tell my brother that the grilled cheese he was eating was a waffle because i had made it on the foreman grill....he believed me and put syrup on it.

I have no brothers but three older married sisters, so my brothers- in - law have sort of become brothers over the years. Especially the oldest, since they got married when I was 12 and he's been around since 3 years or so before then.

As far as being sneaky with my cooking...I have been known to puree sweet potato and squash into pasta sauces.
It adds a lovely sweetness and the tomato sauce masks the crazy orange colours.

Flax!! You can use flax instead. I think its 1 tbsp flax and 2 tbsp water for an

adding in cereal, like granola or cheerios. Cereal PB cups!! Or add

Oh man, I ran (not walked) to the kitchn to make these, but you know me--- I had to modify. Of course I used stevia in the raw and almond butter b/c it's what I had, but then I did two egg whites, some buckwheat groats and then (here was the mistake) quite a lot of wheat bran. My own fault that they tasted like something you'd feed to a goat. Grr. Next time, less or no wheatbran. :-) They WERE super quick though- love that!

Ok so your family looks awesome!!! And peanut butter cups are my absolute FAV thing, especially with the dark chocolate - but I never get to eat them. So now I'm going to have to try this recipe for sure :) I'm scared to ask, but how many calories are in those wonderful-looking treats??

You know, i don't the calories are that bad. I used the mini muffin cups, so I'd
say around 100 or 110 for each muffin. And maybe around 180 to 200 for the large
muffin. Not bad!
