Blonde Bread

It had potential, it really did! But when my blonde roots started to shine through my recently darkened hair, there was no stopping it…..

The bread became brain dead! (no offense to blondes, I am totally makin’ fun of myself here)

Okay okay, let me back things up here.
Yesterday afternoon I had a hankering from some lovely bread. I was kinda over the gingerbreads, pumpkin breads, etc. (too much too soon I guess). Anyway, I saw this recipe and it looked divine! I thought I’d do the regular “cotter tweaking” and all would be right in my world. Here were my changes.

Lavender Tea  Kaffir Lime Bread

Original Recipe Yield 12 servings
Ingredients
  • 3/4 cup milk  (I used almond milk)
  • 3 tablespoons finely chopped fresh lavender Kaffir Lime Leaves

  • 6 tablespoons butter, I used 3 tbsp grapeseed oil
  • 1 cup white sugar stevia (to taste)
  • 2 eggs I used 1 egg and 1 egg white plus 1 tbsp flaxmeal
  • 2 cups all-purpose flour (I used GF flour)
  • 1/4 teaspoon salt
  • I also added in 1 tsp vanilla and 1/2 tsp each of cinnamon and cloves.
  • ******1 1/2 teaspoons baking powder -THIS IS WHERE I BECAME A DUMB BLOND and TOTALLY FORGOT TO ADD IT!!
Directions
  1. Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 9x5 inch loaf pan.
  2. Combine the milk and lavender leaves in a small saucepan over medium heat. Heat to a simmer, then remove from heat, and allow to cool slightly.
  3. In a medium bowl, cream together the butter oil and sugar until smooth. Beat in the eggs and flax until the mixture is light and fluffy. Combine the flour, baking powder, spices, and salt; stir into the creamed mixture alternately with the milk and lavender leaves until just blended. Pour into the prepared pan.
  4. Bake for 50 minutes in the preheated oven, or until a wooden pick inserted into the crown of the loaf comes out clean. Cool in the pan on a wire rack.
So you see, it had potential. The crust tasted pretty darn good, but the lack of baking powder and extra egg made it fall short of its glory. BOO!

So I put a fork in it and called it done.

Sadie had her GF treat for the day. I promise you she’s not spitting it out.  Good thing dogs don’t care if bread is too chewy and flat, haha!
I will redeem myself, oh yes, I will! I am thinking I need to go with Joanna’s recipe instead and add in the lime leaves or even rosemary.
And in honor of thanksgiving week, I will give thanks. I am thankful that even though my recipes can fail at times, I can stand tall and laugh at myself. Cheers to being ourselves!

Pretty darn funny! Life isn't perfect and neither are we! I'm glad that you can laugh about it and move on. I hate messing up when baking, it drives me nuts though! Oh well, you just have to keep practicing. :)Dogs are great taste testers too. At least their bellies will be happy.

I hate when My GF breads turn out like that! Don't generally treat my dogs, but today I was feeling loving and they delighted in my blueberry pancake with Peanut Butter. One of them made that same face:)

Well, unless you make the dog regurgitate it, I was thinking you could cut it up and make it into a bread pudding! Oh well...next time (cuz there's ALWAYS a next time when experimenting in the kitchen...but that's the fun part, right?!!)

oh no! baking powder! Very very important ingredient! But you know, the last time I made a blondie, it was banana blondie, and I forgot the SUGAR! lol!

Still looks edible! Better than what I did last week- adding a whole TABLESPOON of both baking powder AND soda to a loaf I made...

Aww welll at least someone enjoyed it! I made that chia bread you posted a while back but I don't think it cooked long enough because it was super moist! But still yummy!

The lime leaves are pretty creative, I must say.

Ha! Sadie's awesome. I love it when you can have a personal cleaner in the kitchen but it sucks when you do stuff like that...trust me, it's happened to me more times than I count!

I call it trial and error. Live and let die. :)

I have had those ind of accidents too. The first time I made Lemon Meringue Pie, I used corn meal instead of cornstarch. Needless to say, it was a bit gritty : )

I made a double batch of Italian biscuits and lost count of how many tablespoons of baking powder I added! I added too many, and they turned into bitter salt cruchy things. EW! We all do it. I'm a brunette, so I have no excuse! LOL!
