Monday’s Motivation

I cannot thank you all enough for your kind words regarding my Nana. It was great to be with her this weekend. She motivates me and inspires me to be a better person! It was a bittersweet feeling coming back to Austin.

My hubs (the hubs) has been another source of motivation.  He’s determination, strength, humility, and will power motivate me to be a better wife. Well, most of the time. haha!

He trained on the trainer this weekend in Dallas and my dad put a Guinness in front of him for more MOTIVATION. Classic!
And lastly, You all motivate me. Ya, sorry to be all mushy. I think I’m high on emotions right now. You motivate to live in balance, be myself, and embrace my passion for cooking. And for that CHEERS to you! I leave you with a recipe. Yes, a recipe. I’ve never partaken in Meatless Monday and tonight I decided to celebrate that blogger trend. The hubs was even excited for it!

Mac n’ Chickpea Cheese

OLYMPUS DIGITAL CAMERA
Ingredients:
Gluten Free Pasta (macaroni or rotini)
Daiya shredded cheese (1/2 cup)
1 can chick peas
1 jar pimentos
curry powder
garlic- 1 to 2 tsp.
sea salt and black pepper- to taste
olive oil or other oil of choice (2 tbsp.)
almond milk (unsweetened)- 1/4 to 1/2 cup
Directions:
First, drain the chicken peas and dry them off. Coat them in 1 tbsp. oil and curry powder. Spread on a baking sheet and bake at 400F for about 15 minutes or until gold brown. Set aside. Then cook pasta according to the directions. Strain the water and add it the milk, cheese, oil, and seasoning. Stir on low until cheese starts to melt. Once its starts to melt, add in your chick peas and pimentos until all the cheese is melted and coated onto the pasta and chick peas. Then……EAT and ENJOY in GOOD company. Goes best with family and friends!

MMMM. I have been meaning to try this Mac and Cheese for awhile, I just always forget once I get making the Mac and Cheese.

Aww your mom and nana are beautiful! I see where you get your genes!! :) You are a great source of motivation too, LIndsay! I know you definitely are in my life and I haven't even met you person---but I feel like you are ALWAYS there for me checking in and offering encouragement. I'm sure that your 100x more encouraging for the people that are blessed to know you in real life.

Gosh, now I'm being all mushy! But it's all true! I love you friend!!

I am SO glad you got to spend time with your family this weekend and your precious Nana. Great photo of you 3 beautiful ladies. :)

I love a whole bunch of bloggers but there are a special handful (including you, of course) who really motivate me and who I feel connected to on a daily basis. And Billy always motivates me with his positive attitude and great outlook on life. I can't believe I get to share my life with him! It's ridiculously awesome.

That shot is hilarious! I want it on a postcard! motivation? honestly, bloggers! I dont know but i guess befriends other cool/like minded people motivates me to be a better, healthier person. Whats your favorite gluten free pasta? I don't really like that brown rice one, it always gets stuck!

Haha I love that picture of the hubs! I often think of a big bowl of oatmeal while I'm training! :)

Well, other bloggers and people I look up to motivate me. But also I have always been super stubborn and determined, so I think I motivate myself.. I dont' want to let myself down!

so sorry your nana is suffering as well as your hubs, friends, and others in your life with their issues. No one can be expected (nor would it be normal) to be Miss Chipper about it all, all the time. You are more than entitled to have a lil moment :)

normally i dont crave mac n cheese, even food pictures of it dont make me drool. when i saw this i have to admit i thought "I WANT THIS NOW'" maybe its the chickpeas with the colored macaroni, but whatever it is, clearly is making me HUNGRY!! i feel like ur hubby staring at the guinness..just wanna charge through and grab it <3
