Thankful Thursday


Wow, crazy week! Tropical Storm Hermine blew into town Tuesday morning and had record breaking rain and floods for 2 days. Check out the bloomberg report here! That being said, lots of our friends had flooded apartments, homes, cars, and even schools were flooded. It was madness! We live out by Lake Travis so luckily it did not hit our area as hard. No flooding here, and for that I am extremely thankful!! Its funny, you don't realize how much you depend on certain possessions until they are gone or destroyed. The storm has now moved up toward Oklahoma and Arkansas so for those of you living there, be careful!!

Moving onto a lighter note, I am also thankful for health! I've been on a gluten free diet for almost 2 years now and my health has turned around tremendously. No more sickness, stomach pains, and weakness. I feel stronger and will keep focusing on keeping my body strong and well nourished! I wanted to share with you all one of my favorite gluten free foods. KING SOBA NOODLES.

I've made a ton of dishes with these noodles.





So many different flavor combos and all gluten free! Pumpkin Ginger, Sweet Potato Buckwheat, Wakeme Brown Rice, Black Rice, Thai Rice, and more! Check out all the flavors on their websites.

 
A lot of you all asked me where I got them but unfortunately they are hard to find. There is only one store in Austin that carries them. I would LOVE to share them with you all. That being said, I am going to do my own  GLUTEN FREE GIVEAWAY!!  Get excited! I'll send one of you 3 packets of these noodles. You just have to tell me which flavors you want to try. thankfully we have not had that flooding here in Little Rock, but other parts of AR has. So, I must say that I am thankful that we have not had that kind of flooding here.

Recipe - hmmmm - if I had the pumpkin flavor, I think I might do a butternut squash and tofu puree as a "cream" sauce and maybe some walnuts, spinach....

I think the black rice looks interesting!
Of course the sweet potato buckwheat and then the pumpkin,ginger, and brown rice sound yummy too!!
How is it that I have not heard of these before??? I and 3 of my 4 boys are all gluten free!

I usually make noodles with a nutritional yeast and garlic sauce for a cheesy kind of sauce.
I am not sure what I would do with the pumpkin ginger. maybe a curry sauce!

I am thankful that I have a job that I really like and that I make good money and don't have to be away from home for very long. (I am going out of town for work for 3 days tomorrow so its on my mind :)

I am thankful that there are so many gluten free options these days. Five years ago is was hell to get gluten free stuff. Especially in the little town we lived in before moving to Des Moines.

I am thankful for lovely fall weather and that we are having lovely weather. My thoughts go out to those affected by the storms and fires going on now.
I am thankful for so much more but have to head to bed and can't just take over this comments section!!

oh wow, glad to hear that the flooding didn't hit you and James. Hopefully Austin returns to it's sunny hot self soon, and the damage is minimal! Thankful thursday, can I be thankful for your fun blog? :)
But I'm very thankful for my friends & family, and I'm really thankful that I'm lucky enough to have another amazing opportunity to race this weekend! :)

Great giveaway! I'm glad the gluten-free diet works for you. Billy has sensitivity to gluten so he watches his intake but not as much as he used to. I'd love to try the pumpkin ginger - perfect for fall!

Oh my - I'm thankful for so many things this week...we got our marriage license today and it was a wonderful reality check of the adventure we are about to take. :)

Glad to know you were not affected too much by the hurricane...I can only imagine how scary it must have been!
I love those noodles! I've tried the pumpkin ginger falvor before, but would LOVE to try the brown rice & wakame :)
So what am I glad for... so many things, it's hard to choose! But what comes to mind right now is to have the chance to be surrounded by an amazing family, husband and friends :)

Oh my gosh! I cant believe that picture is in Austin! Over here on the East/North side, there isnt that much flooding or damage! Crazy!
I had no idea you were gluten free, that is awesome. I know it can be a difficult transition, one of my friends is very intolerant. Hmm.
Concerning them nerders (noodles in college speak), I would definitely want to try the pumpkin. Yeeup.

I would LOVE to try these... I have been gf for a couple years and it has been extremely helpful in my energy and overall health... Jason just went gf last month, and the transition has not been bad because we were a 90% gf pantry anyway... now I just don't buy him separate bread :)

he loves his pasta, and keeps bringing home new ones to try... I think he'd be interested in these also :)

Oh, I would love to win some gluten free noodles. I've been trying to do more gluten free, but haven't totally gotten it out of my diet. I'm curious to see if it will help my IBS and joint stiffness.

Oh, and for a recipe...I think I would take the sweet potato buckwheat noodles and top with some sauteed kale, olive oil, tomatoes and shrimp. A light sprinkling of goat cheese to bring it all together.

(I'm salivating now)

Those noodles look great...anything with pumpkin is A-OK in my book. Unfortunately, even GF pasta doesn't settle with me well, so if I want pasta I have to do spaghetti squash.

I would love to try the pumpkin flavor, and pair it with a very simple topping, sauteed onion, zucchini, olive oil, garlic...

today I am thankful for being with the sweetest guy, Jason, having a super sweet pup that lets me dress him up for Halloween :) and goes on 2 mile walks with me. I'm thankful for family and friends and blog friends too :)
