The "Puffinator"

Good Monday to you! I think we all agree its a love/hate relationship. Glad its over by still, its Muuuuunday. Tuesday are actually the craziest for me so its kinda the calm before the storm. Anywho, lets move on....
So most weekends I designate a "Forest Gump" run. This is a run that has no strings attached. Just like Forest said when asked why he was ran for so long........"I just felt like runnin'..." Yep, that how I feel. No garmin, no heart rate monitor, no iPod, no idea how far, no idea how long, or how fast I am running. This is the time where I decompress, clear my mind, and enjoy our beautiful trails.

During these "forest" runs, I also have lots of recipes that come to mind and I get so excited as they all start to unfold. Well, this past weekend I had one thing on my mind, PEANUT BUTTER PUFFINS.

The hubs and I love the taste of these suckers and I thought, how good would they be in a MUFFIN!  So when I got back from my run, showered, refueled, etc. I was ready to get in the kitchen for a little play time. Here's what I came up with and let me just say, they are all gone now! This is definitely a recipe I will make time and time again.

PUFFINATOR MUFFINS
Ingredients:
1/2 cup buckwheat flour
unsweetened 100% cocoa (1tbsp)
1/2c frozen blueberries
1 1/2 cup wheat free PB puffins
small handful raw pecans
large banana ripe
2 tbsp sweetener (stevia, truvia, splenda, raw sugar, etc)
1 egg
1-2 tsp baking soda
1 tsp vanilla extract
1-2 tbsp honey
(The honey is optional- this is if your batter is not sweet enough for you. I actually did not use it)

batter ready to scoop
Directions:
Blend together banana, puffins, and pecans until it forms into a soft batter. Pour into mixing bowl and add buckwheat flour, baking soda, sugar, egg, vanilla, and mix well. Then fold in your blueberries. Scoop into muffins pans and bake at 350F for about 35 minutes or until a knife runs clean when inserted in the middle of the muffin. These take longer due to the lack of real flour but they are nice and moist inside.
Makes 6 medium muffins.


Tasted great, like a big bowl of puffins and berries! I added a little tahini butter in the middle for a savory snack.

Those are your back yard trails? Wow! Beautiful, no wonder you can go on forrest gump runs, just the scenery is enough to keep you inspired and motivated!

Those muffins look so cute! I often use cereal to make muffins for my husband. It's a great way to finish off those boxes that we just know we won't eat otherwise!

I'm not a fan of PB, but I might give these a go with the regular flavor Puffins. I've been meaning to make another batch of you Cherry Chia muffins as well.

Oh now that makes for a gorgeous run to look forward too!!! I have never tried that cereal. Isn't it funny what you can come up with on a run?!

Holy moly this is hilarious. if we didn't have enough nutritional similarities :)- james calls me the "puffin monster" b/c i go through a box in just a few days...the PB kind...the other kinds i can keep for like a week or so, but my weakness is the PB puffins. true love!

Ok where do I begin...
If I had trails like that in my backyard I'm sure I'd have more of those Forrest Gump runs too! Most of my Forrest Gump moments happen with walks, not as much with runs, especially lately since I'm actully training for races. That's part of the reason why I don't like training, bc it takes the fun and spontaneity out of it.
PB Puffins rock, so Im' sure those muffins do too!

Hi, Lindsay! Thanks for the comment on my blog - and sorry for the delayed response. We just moved to California last weekend, and flew back to our home state of Nebraska for the week. Life is hectic! Anyway, I love PB Puffins, and these muffins look fantastic! :)

I think those look awesome, but dont puffins have gluten? They don't have wheat but I'm pretty sure they have gluten unless they came out with a gluten free version. Anyhow, I am very very jealous of those trails, although I cant complain, we got some nice ones here in So Cal

The PB puffins are wheat free and the original are gluten free. They only have some oat flour in the PB puffins and oats don't seem to bother me. GOOD THING cause I am addicted!
