Never Ending Pasta

Hello, its almost Friday. That's Fabulous! Well, the hubs left again today for another race this weekend. This time its the AUGUSTA 70.3 Ironman. Wish I could go but someone has to watch the pups and do some work around here and I really don't feel like doing his job. I said it before and I'll say it again, I really need to take more personal rest days, it totally pays off in the end!
Anyways, the other night I was drooling over the "Never Ending Pasta" bowl on the Olive Garden commercial and had an idea. You see, we are pasta lovers (well gluten free pasta that is) and I could literally eat bowls of it. That is my guilty pleasure, well that and pancakes! So I was thinkin' I could re-create this guilty pleasure (in abundance) without feeling super stuffed and left in a carb coma. How so? Two words...SHIRATAKI NOODLES. And with that being said, here is my PASTA LOW-CARBANARA.

PASTA LOW-CARBANARA
- 2 packs shirataki tofu noodles
-1 bunch fresh kale
-garlic powder (1tsp)
-sea salt and black pepper (to taste)
-dash of olive oil
-2 eggs
-nutritional yeast (1/4 cup)
-basil cube or chopped basil (2 tbsp)
-raw yogurt cheese (optional)
-small handful of diced canadian bacon or vegetarian bacon (optional)
-grape tomatoes (3/4 cup)

Directions:
Drain your noodles, set them aside. In a large skillet, sautee or steam your kale and tomatoes until they are ALMOST done but not fully cooked. Then add your noodles and a little bit of olive oil. cook on medium heat and then add your seasoning- basil, garlic powder, sea salt and black pepper. Mix that well then add in your bacon, eggs, and cheese. stir occasionally till the eggs are cooked and cheese is melted.
Load up your plate and serve with a side of gluten free bread to scoop up the yummy sauce left over!
Take that Olive Garden!

Well, that's all the brain power I left for the day. But I have to end on by announcing my favorite post of the week. Eden over at Eden's Eats wrote an awesome post the other day that made me laugh as well as made me think of all my "weird" yet "normal " habits. I just can't even imagine doing 2 races like that. Wow. Makes me tired thinking about it ;-) My hubby does tris for fun and I know how tiring it can be just going to those for support so an Iron...wow. Yummy recipe by the way.

Your pasta dish looks yummy, but I'm afraid I don't like shirataki noodles anymore, something about the smell or taste... :S

Yes, personnal rest days are CRUCIAL! As important as eating healthy and exercising in my opinion.

By the way I was so happy to see you featured in Smart School Time Recipes!!

That looks really good- I wish I had some of those noodles! I'll have to see if I can find some...or pick some up when I'm there! Just booked my hotel at the Radisson Town Lake downtown. Where do you guys live in relation to downtown?

I can't wait to get to Austin!

LOVE shirataki noodles- great idea to put in the egg and 'up' the protein- and LOVE yeast. So cheezy. :-)

I love shirataki noodles. It's been too long since I've bought any though so this was a good reminder. I love pasta - LOVE it - but agree sometimes, especially if paired with a heavy topping, can be too much.

Pasta Low Carbonara = genius. I haven't yet tried shirataki noodles, but I will now!

The noodles looks different from the usual pasta being sold on the market, it seems soft and smooth. Well, seems like I've a new way of preparing pasta, a healthy one.
