Name Change

I think I need to change my name. You can.........call me CRAZY! That's how I feel right about now. But who cares about feelings, blah! Move them aside and lets move on right? Tomorrow is another day, and that's what I said when I totally FORGOT to post Mission Monday....um, yesterday. THEREFORE, we're also going to give Mission Monday a new name. Lets call it Mission Makeover. Does that still make sense? Oh well, at least this gives me a choice of day to post this "mission" versus having a Monday deadline. Enough rambling from crazy here. Lets let SANE Bre take over with her Mission Makeover. Remember that Nuttzo Stir Fry? Well this Celiac Canadian Triathlete made it her own special way and is here to share her thoughts. Remember......she is busy writing a thesis, working, training, and also has limitations in finding specialty foods (no whole foods for at least 100 miles). So its always good to see how she "tweaks" the recipes Canadian style.

Mission Monday Makeover: Canadian Nutzo Stir Fry

Hope everyone had a good 4th of July weekend! After a month of craziness working and racing every weekend, I had this weekend off from racing, and pretty low key for training so I got a chance to make Mission Monday Nutzo Stir fry

We used the exact recipe that Lindsay posted with a couple small changes. One we can’t buy Nutzo in Canada yet, so I used Maranatha Almond Butter and instead of chicken/salmon/tofu I used shrimp instead, and for Bragg’s Liquid Aminos, we can buy that, but have to go to a specialty store and I had soy sauce in the house so used that.


The cooking process:





So I don’t own a wok or a pan that is big enough, so we had to do everything separately and then got creative and mixed it in a large bowl. For the sauce we melted the almond butter in the microwave and mixed in the soy sauce.




The yummy goodness in a mixing bowl (so it doesn’t look that appetizing in this state but it was absolutely delicious, meaning we had already been eating the veggies as we waited for the rice  )

Easy recipe- grab the veggies, chop em up, and into the pan! Sauce was almond butter melted and soy sauce, and the rice went into the rice cooker. Dinner was started and done in less than 45 minutes!


I had never eaten cooked cabbage or soy beans, so I was happy to try something new- both of which I really liked and will be using again. I love shrimp, so I used that instead of chicken/salmon (and I had the shrimp in my freezer). Anything that uses almond butter (actually, any peanut/nut butter) is amazing. I LOVE nut butter, a ridiculous amount. Carrots are my favourite---currently I’m a little orange so I clearly love them. The mix of all these = yummy almond buttery veggie goodness & a very happy tummy.
As for my GF diet, this is a recipe I could easily make for friends who aren’t GF & they would never know it was gluten free! (those are the best recipes). And for the athlete lifestyle, stir fry is great for dinner. It is quick & easy , and has everything in one dish. I love the veggies, so I often have to really think about getting enough protein, but this dish took care of that easily. I would like to say that it made leftovers but with two triathletes mid-season....we might have eaten it all!

Oh yes, and part of our Mission this weekend, was to bake a birthday cake for our good friend son’s 4th birthday. Specifically, Diego...so the three of us tackled cake making and decorating (Nic is AMAZING at cake decorating so she taught me and the boy’s mom how to decorate) and this is the result!       GO DIEGO GO!

I like the sound of a almond butter, shrimp, veggie stir-fry! I've never had any kind of almond/peanut sauce, but I'm thinking now I will have to give it a try!

I had some sort of nut butter stir fry tonight too! I microwaved spaghetti squash and then got the strands out and stirred it in my stir fry with almond butter, cabbage (I used a bagged cole slaw mix), and bits of turkey. I love nut butters as sauces or dressings!
PS, I want to do a bloggie gift exchange with canadians so I would send some american goodies and vice versa, you interested?

Love the sauce idea for the stir fry. YUM. We have an electric wok that I love using this time of year (we have a gas stove so we can't have ceiling fans on when it's on so kitchen gets hot!). Hope you enjoyed that vino ;-)

ooooh awesome dish! I do most of the cooking at home now and I always serve up everyone wheat-free dinners (including pizzas etc!) and they are yet to notice any difference :)
