M&M

Momma and Monday, that's what M&M stands for. Catchy, eh? Not really, but I just don't like blog titles. Anyway, today is INSANE! I always wish I could bake for hours and blog but then reality hits, ugh. I was in the kitchen for hours today but that's only because we had last minute order for Healthy Bites. We leave for California on Thursday and I cannot wait! Remember, the hubs is racing Vineman 70.3!! Woo hoo!

Anyway, Mom came to rescue and offered to share a recipe. How cool is that!?! My mom is probably the most humble, loyal, and sincere person I know. I'm hoping I get some of that rubbed off on me soon.






So without further a do....here's my Momma and her famous PAPAYA SALAD!

Hello, Lindsay's Mom here (aka Beba, Momma V, Veta). I wanted to share a little background and a healthy recipe to go along with it. Lindsay's great grandmother (Nanaw) was 104 years old when she passed away. Her great grandmother always had good vegetables and fruit with her meals and never ate too much. Plus, I don't remember her eating too much junk food. I am far from 104 but being in my sixties I am trying to stay healthy by my food choices and amount that I eat. We eat a lot of salmon, chicken, fruit and vegetables but we still enjoy our weekly mexican food.


 Papaya Salad
2 heads of Romaine lettuce chopped
1 head of bib lettuce chopped
1 papaya - chop the fruit and keep the seeds for dressing
1 avocado - chopped
Put all above ingredients in a salad bowl except for the papaya seeds

Dressing:
1/2 cup sugar or sugar substitute
1/2 cup white vinegar
1/2 teaspoon dry mustard
1/2 cup chopped onion
1/2 cup vegetable oil
2 Tablespoons fresh papaya seeds
2 teaspoons salt
Blend in blender - adding seeds last. Pour over salad (I don't use all the dressing). Can refrigerate any leftover dressing up to 3 days.

Thanks Mom. You made my Monday! Now I'm off to go re-create this recipe! Add a little Grilled Salmon and you've got a FANTASTIC light meal. YUM!

I heard Google is now trying to out do Facebook and come up with something even better. Glad we can add more to the social media jumble (said is sarcasm!!).

Your mom is beautiful! You look a lot like her. That salad looks deelish. And yes, salmon would be such a good addition or seared tuna! I want to know more about Healthy Bites...

aww thank your mom for me! My mother died when I was thirteen so I tend to befriend all my friends' mothers! I can tell you have good genes!
papaya is AWESOME and so healthy too. I make a mean papaya crumble with almond flour and greek yogurt!

The Sutter family has a katrillion (not so healthy) recipes in the family. I even created an online cookbook so the gang could reference them anywhere, anytime.

I still have a Myspace account, but it has cobwebs and dust bunnies. I haven't touched it in at least a year or more (maybe 2?). I just delete all myspace things that come in my inbox. I should probably just make the effort to go delete it completely right?

Your mom is so pretty! Thanks for the recipe Lindsay's mom! The salad looks great. I was just thinking about myspace this morning. I used to have one, but cancelled it a few years ago. I don't think I know anyone who still uses it.

Is this something that can be made the night before and still good for lunch the next day?

Oh, I've been meaning to tell you I found Marmite at the grocery store, but saw the sodium stats and put it back. My ankles are already swelling, and I'm fearing a lot of salt these days...and cankles! ;)
