Weird Wednesday Wins

So yesterday (Tuesday) I thought it was Wednesday all day today (Wednesday), I'm was feelin' like it was Thursday. Kinda a bummer, but at least its not Monday, phew!
And on the that note, I've been craving some "interesting" combos lately. I think my taste buds are all messed up from the sinus infection. Oh well, I'll go with it and embrace the weirdness of this Wednesday.

Snack Time:

Can you tell what this is?




Let me explain.
Two large celery stalks, spread with natural goats milk cheese spread, almond butter, dried apricot slices, and drizzled with agave nectar.
Good? Um, no......great! New combo creation I'm totally diggin'.

Loaf of bread with dinner? Looks kinda like it, but its not.


April got me wanting to try this bread/snack. She posted it last week (original recipe from her friend Joan).

Let me explain whats in it.
1 can tuna fish
1 egg
baking powder
cinnamon
stevia
I added a little peanut flour because I was an ounce short on tuna.
Blend in food processor and bake in small casserole dish for 25 minutes at 400F.


Good....surprisingly yes! No tuna taste. Thanks April and Joan.
We topped it with once again goats milk cheese spread and sun nut butter. Talk about some weird combos and craving. Never thought I would be baking fish as a bread alternative but hey...its DAIRY FREE and GLUTEN FREE (minus the goats milk cheese on top).

Alright, i think thats enough food talk for you today. Any weird combos out there you might want to share? ! I love trying new combos....bring it on!

Its been one week since I've been able to get outdoors to run so I tried it out today......success! Loaded up with Claritin and enjoyed my trail run (slow run), allergy free!!!!

And I thought I had weird combos of food. I'm going to try that tuna bread just because I can't imagine it not tasting like tuna.

yay congrats on an allergy free run!! this spring was bad for running for me too, i have allergic rhinitis.. urgh i would run and then spend 2 days with a nose cold and flu!! not fun :(

yay i guessed they were dried apricots! yummy prolly delish on celery sticks- clever!

I hate it when you think it is later in the week than it actually is! This week is seriously dragging but at least it is Thursday :) The celery combo looks awesome! I'm not a fan of tuna but I have to admit that is quite the creative use of it. This isn't the healthiest combo but back in high school (and now every memorial day weekend) my best friend and I would eat dorito bagels- bagels, cream cheese with doritos (cool ranch is my choice) crunched in between. So weird and so good. :)

Haha I'm so glad the bread turned out!! I was afraid maybe I have some weird taste buds that can't taste the tuna... glad to hear I'm not a weirdo! LOL

the celery thing looks good. i used to eat "ants on a log" when i was young, but i would just eat lick the pb and raisins off and leave the celery. i think i would be afraid to try the tuna bread.

I thought I combined some weird things but wow, you take the cake on this one. That celery stalk looks yummy though, just not sure about the tuna one.

O love that celery thing! I only use celery for stews and tuna/chicken salads, but I think I could dig this. I'm gonna try the celery with dried figs and cottage cheese cause I love that combo. Dont you love discovering cool new combos u love?

i love your lil snackie of ants on a log, pimped up! nice!! I need to make something like that for skylar! or me :) We do ants on a log but i love dried apricots.

popcorn. make it. DOUSE it in oil or cooking spray otherwise the goodness doesnt stick well
