Some Much Needed Shout Outs :)

Hello. Happy Mid-week! I hate saying Hump Day...not sure why, just doesn't jive with my me. Anyway, this post calls for some much needed shout outs. We all like shout outs, right? Feels good to receive some earned credit!

First up...the lovely HEAB! I can't get enough of her recipe creations lately. So savory and delicious. I think being pregnant has set off some different combinations and I'm diggin' it!
The other day HEAB posted an awesome omelet crepe recipe and I just had to recreate my own. Besides, I know the Hubs would love it as well!

Not sure what to call this Omelet/Crepe creation but it did involve strawberries, creamed goat cheese, and dark chocolate almond butter.

How to make it?
2 eggs (whites and yolks separated)
splash of vanilla almond milk
fresh strawberries, sliced

Honey and Cocoa to top
1 tbsp Dark Chocolate Almond Butter
1 tbsp Creamed Goat Cheese (looks like cream cheese)


Heat plan, then fluff egg white mixed with a little almond milk. Pour egg whites into pan then pour the beated egg yolks on top after the whites have coated the pan. Mix chocolate AB and Goats cheese.


Then spread evenly into center of eggs topped with strawberries.


Let it cook evenly and flip the sides. Transfer to plate and top with a little Cottage Cheese, 100% Cocoa, and drizzled honey. Perfect and Savory!



Add some greens to complete. I call this a winner for our dinner, haha!

I love the fact that they are based our in the Sonoma wine country as well. My two favorite things in one place? I must move there! Actually, we will be there in July for the hubs VINEMAN 70.3 race and guess who happens to be a vendor? yep, VIBRANZ Kombucha! I'm really getting lucky these days with all the great vendors at races.
I'll be able to meet up with Vibranz at VINEMAN and sample even more of their great product! I've tried the Lemon Ginger and Chai so far and both flavors are great. SO refreshing. I also like the fact that they are NOT loaded with extra sugar. Simple ingredients that are brewed and fermented properly. Can't get any better than that.


Last shout out is short and sweet! Just wanted to thank James and Beth Walsh (awesome triathlon couple) for introducing me to NuttZo. I'm turned into a Nuttzo Guru and I like it! You must check out James and Beth's awesome food blog as well. Lots of good eats and creative recipes.

Oh that omlete looks good! I'm not a big cheese fan (have no clue why!) but is the goat cheese strong? If it's mild, I bet I could get used to it!

Oh man that omlette looks like dessert not dinner! Sadly I just ran out of my goat cheese (you'll see why in my post lol).

So much love today, and I am so honored to have made the list. OK, your omelet looked amazing. My gosh, I miss cottage cheese! So glad both you and husband enjoyed. I would have loved to have joined you for dinner! Definitely a winner.

I've never tried the Vibranz brand kombucha, but I'll be on the lookout for it. I'm avoiding the stuff for now as last time I drank it, I felt totally buzzed. Will wait to try post HEABlet arrival. :)

P.S. Never understood the "Hump Day" thing either.

haha. I know! I heard the big news about the WF Kombucha. Luckily its just a labeling issue with Whole Foods guidelines so not the kombucha itself...phew!! THis brand is brewed and labeled properly. hehe.

That Omelet looks so good! I've seen a couple recipes for "sweet omletes" but haven't tried yet...looks like I'm going to half to try it!

In response to your Tweet about ideas for your class: I used to make the girl I taught "spring break Boot Camp" start at the baseline of a basketball court sprint to the free throw line, 5 burpees, sprint to half court, shuffle 5 yards each directions, sprint to the far free throw line, 5 tuck jumps, sprint to baseline, and then sprint all the way back! Then for each set I would switch what that did at each line. I would also do it in relay teams to add the competitiveness and not let it get boring. Just as idea!

since you go to whole foods, you should totally get synergy instead; vibranz doesn't make me feel any different after drinking it. However, Synergy kombucha drinks ALWAYS have a great effect on me and my day, and are even safe for pregnant women. The taste is far superior, and the effect is worth it. They are also cheaper, and include vitamins, where vibranz does not. I think you will enjoy the difference, and Synergy is following the rules now, with their labeling.

However, Synergy kombucha drinks ALWAYS have a great effect on me and my day, and are even safe for pregnant women. The taste is far superior, and the effect is worth it. They are also cheaper, and include vitamins, where vibranz does not. I think you will enjoy the difference, and Synergy is following the rules now, with their labeling.
