Cotter Comeback

Well.....its been quite the weekend. The hubs has been away racing (more on that in a moment) and ever since Wednesday evening I've been sick with a nasty sinus infection. My sinuses were so inflammed that I couldn't even swallow. My diet for the past few days has been broth, noodles, smoothies, tea, and more broth. It was no fun. So after a trip to the doctor, loading up on antibiotics and pain meds (homeopathic just wasn't cuttin' it!), I am finally able to eat some real food, thank goodness! I've comeback!
On another note, the hubs was racing EAGLEMAN 70.3 today and I was hoping all my sickness stayed with me and not with him. He needed to feel good and have a good race. Well, he did....2nd place! So proud of him. What a comeback for him in his career!
This week we both will be needing lots of good recovery food/nourishment this week since our bodies have taken a beating. Mine be sickness and his having raced back to back weekends. The lovely Joanna (Fitness and Spice) sent me a great raw banana nut cookie recipe. It looked heavenly but required a lot of time with the dehydrating. But hey, I am sick, I got TIME!! Not going anywhere today, rest rest! So I thought I'd try a twist on her recipe and make us raw protein cookies. So if you got time, try it out!

Cotter Comeback Raw Protein Cookies

1 cup raw cashews
8 large pitted dates
1/2 banana
1/3 cup pumpkin seeds
1 serving (35grams) raw plant protein powder (I use Life Basic Vanilla but any protein powder can work)
1 tsp sea salt
cinnamon to taste
1 tsp vanilla

1. Combine cashews and salt in food processor.
2. Then slowly add in the rest of the ingredients finishing with the protein powder
3. Scoop onto a cookie sheet and press into round flat shapes, Makes around 11 cookies.
4. Dehydrate in the oven on 140F for 3 to 4 hours. Keep the oven slightly open. If your oven doesn't go that low, 170F will work just try to make sure there is air circulating in the oven, so again keep oven door slightly open. Might take only 2-3 hours.





And Voila! They don't look that great, but trust me, they taste yummy! Just what my body is needing, GOOD DENSE CALORIES!! Can't wait to bring some to the airport for the hubs.

Okay, I am off to rest up so I can be sick-free when the hubs gets home to celebrate!

ugh, hope you get to feeling better ASAP! Being sick is no fun, thats for sure. But hey, at least you got to make that awesome cookie recipe...I am saving it!!!

Sweet. Congrats to the hubby. Last time I had the sinus thing I broke down and bought a neti pot. I swear by it now. Hope you feel better soon.

love these! I have been looking lately for dehyd breads/crackers, but sweet, not savory! I can imagine these would be great! I used to dehyd a lot but Phx was too hot...thank god we're in San diego now and i can actually run my hot box for 10 hrs if need be LOL

Ok, your cookies sound WAY better than my original recipe! And, you're right...raw food rocks but it's often not the prettiest food on the planet, especially when dehydrating.

Pistachios are also one of the healthiest nuts! I put them on dried apricots and call it my raw "thumbprint" cookie
