Taco Tuesday....its back!

Hola! (That's about all I know for Spanish). Anyway, its been a busy couple days. Family in town, work, train, etc. Can't complain though......look who arrived yesterday?!?!?

So since we've been a little preoccupied, I was in need of a good crock pot dish ASAP today. I had some frozen ground turkey and instantly thought of a crock pot taco salad. Super easy and delish!

Easy Peasy Taco Salad

Whatcha Need:
1 package thawed lean ground turkey (my package served 4)
1/4 cup chopped onion
1/4 cup chopped red and green bell pepper
1/4 cup any other veggies of choice (I used a corn/celery combo)
1/3 cup black beans
1/4 cup Salsa or chalula sauce (I used a little of both)
Black pepper to taste
Lots of Cumin
Couple pinches of sea salt
sliced avocado
grape tomatoes (sliced).

What to do:
Throw everything in a crockpot and mix up. Cook on high for 2 hours then low for 1 hour or so. After this I added a little chicken broth and cooked it on low or warm until dinner time.
Pile up some greens on your plate, throw the mixture on top with some sliced up some avocado, grape tomato, and cheese (we use almond cheese) to garnish.
NOTE: To make it vegan, you can use tempeh or even a black and pinto bean mixture.


But wait....there's one more thing. We found these delicious chippers at the store and they were perfect for this salad. Beanitos are loaded with good fiber, protein, and are gluten free! Check out their website for more flavors. They Black Bean Beanitos had a killer flavor....we loved them. Crush a few and place on top of taco salad for the grand finale.

Yum. I've been wondering if you can just cook meat in the crock pot that way. I always spend time browning the turkey in a pan. But good to know I can skip this step. And those chips rock. Had some a few weeks ago.

Oh yum!! Do you think I could use Tempeh instead of Turkey? Or maybe just add more black beans??

Oh gosh, I love crockpot recipes. Mainly because there really isn't much of a recipe, just ingredient lists!

luv your receipes, even i can do a few and i cant cook!! So we have company this weekend, hubbie is the cook and leaving town, so i am it!! Yikes!! So my stupid question for the day, on the black beans, do you mean from a can or dry from a bag??

You can use canned black beans. I'm sure the raw ones would work too but you might have to cook them in pot longer. Drain the canned beans and toss them in. Good luck this weekend! Let me know how it goes.
