Sassy Sunday



So last week was Simple Sunday with Simple Low carb Pancakes, but this week we're feeling a little sassier. Sadie is feeling a little more like her "sassy" self and the swelling has gone down somewhat,  phew! She looks a lot better than she did a few days ago when she first got bit! (see below)


I had a little more down time this weekend since we couldn't leave the pups (had to monitor the swelling and pain meds), and therefore I had more time to play with recipes using my peanut flour.

 The peanut flour has been good in protein smoothies and in ice cream but it was time to start baking with. I saw this recipe created by the classy, yet sassy, Mama Pea  and tried to re-create my own. I call them my Sassy Grass PB Cookies. The "grass" is because of the Amazing Grass ingredient thats in the batter. Corny yes, but just go with it!


SASSY GRASS PB COOKIES

Makes 14 cookies
3/4 c. oats ( used gluten free oats that had amaranth mixed in as well)


1 bananas, mashed


1/4 c. peanut butter flour (12% light roast)


1 t. baking powder


1.25 servings of protein powder or about 35-40grams (I used a vanilla flavor)


2 tbsp unsweetened cocoa powder


4 tsp of truvia (or sweetener of your choice)


1/2 c. unsweetened vanilla almond milk (you may need less depending on the size of your bananas)


2 tbsp almond butter


1/2 (~5gr) packet Cocoa Amazing Grass Superfood

Combine all ingredients together until completely mixed. Place "globs" of batter on sprayed cookie sheet (I use coconut oil spray) and bake at 350F for 10-12 minutes.


SASSY STATS:
Calories: 62
Total Fat: 3 g
Cholesterol: 1.3 mg
Total Carbs: 6 g
Dietary Fiber: 1.1 g

Protein: 4 g


P.S.
If you wan to really sass these cookies out, place a little greek yogurt on the bottom of one cookie and combine with another cookie to make the ultimate OREO! Gluten free of course!

I don't know if you know, but I was wondering because I don't have truvia. I also don't have Peanut flour... can I use the same amount of WW flour?

Also, can I have a little bit of your kitchen creativity? I'd appreciate it.. thanks!
