Meatless Monday...how'd that happen?

Its been a weekend full of hanging out and eating out with family and friends! Today, despite the holiday, we still had a bit of work. No worries, its all good.  I had time to go to Whole Foods to get groceries. Good idea? I think my blonde roots kicked in telling me it wouldn't be too busy.

Um, NO!! It was crazy! But I still managed to make my way through the chaos to shop till I dropped. I love shopping for wholesome nutritious foods. Its an adventure each time, okay I am exaggerating a little but still, its FUN!
Well, dinner time rolled around way too fast and all we wanted to do was stay in and chill since its another 4:30am wake up call tomorrow. So whats for dinner? Open faced Mushroom Burger.....simple and fast!


Here's my wing of a recipe.

  • Grab a portabella mushroom.
  • clean out roots ( I use a spoon)oil in the inside (I used grapeseed oil)
  • season (garlic, curry, black pepper)
  • Bake upside down at 400F for about 20 minutes
  • Then add a cooked sunshine burger or homemade jiffy burger on top
  • layer almond cheese, veggie cheese, or regular mozzarella cheese on top of veggie burger
  • Place back in oven and broil for 2 minutes or so.
  • take out of oven and garnish with broccoli slaw and chalula sauce.
YUM!!
Serve with sweet potato and brussel sprouts and you got yourself a MEATY MEATLESS DISH.  I actually didn't mean to go meatless today but its probably good we did because we doubled our vegetable intake that might have been a little neglected this weekend, haha!

Yum- that does look good! I am a fan of meat, but I think I will definitely be giving this recipe a try. What do the Almond cheese taste like?

Lindsay, you gotta try almond cheese. Its by Lisanti and they have several flavors at Whole Foods or Sunflower markets. Let me know whatcha think!

Oooh, my kind of burger! We are making some stuffed, grilled portobellos tonight! I'm going to use millet bread crumbs as part of the filling thanks to your idea!

I'm a meat-eater, but I do love my veggies! And I'd rather have that meatless mushroom, than a fake soy isolate burger.

Not much of a soy person either. In fact, I just tried this with egg on top last night. And it was delicous! Egg goes with everything!
