Busy Bee and NO time for ME!!!

Its been one hell heck of a week so far and it doesn't look like its going to get any better till Monday, sheesh! But hey, 'tis life. And sometimes you gotta do whatcha gotta do, right?! Anyway, my down time usually comes when I cook dinner or breakfast. I love it! I love making fun breakys for the hubs and taking my time at dinner to create healthy meals, but this week......that didn't happen. Too much on the plate to even think of meals. Poor hubs! Actually, he doesn't care but I care.

For breakfast, I broke down and bought INSTANT gluten free hot cereal. I always make old fashioned rolled oats or steel cut oats in a pot but this week, its the microwave.
At least I had these essentials to fancy it up and add some good fat and protein. By the way... i LOVE the lifeway GREEK Kefir. Its AWESOME!


and one of my favorite protein powders!! It mixes so well with instant oats!
 
 And now for dinner.....I actually broke down and bought a dozen or so tamales from our local health food store (Central Market) and tried to stretch two dinners out of them. The hubs loves tamales so I knew I couldn't go wrong. But still, I felt bad....all I had to do was warm them up. Thats not unwinding! At least I made the sides...black beans, cauliflower, and spinach salad. Looks pretty, tastes good, but its just not the same!
 

at least their gluten free and organic....does that count?


 
Tomorrow I WILL unwind and COOK a real meal! I am in need of some MAJOR cooking therapy (and maybe a little vino)! At least my trail runs have been keeping me sane, at least for now. haha!
 
How do you unwind after a busy week? What "healthy" meals do you cook or not cook if your in a rush, etc?

I am too much of a coward to try kefir! It freaks me out!!! I've also never had tamales, but I'm not scared of those!

I hope you get some of your unwinding time soon!

Your totally missing out! YOu must try kefir and tamales ASAP! We have a really pace that sells sweet potato chipotle tamales. Right up your alley!

Being in New Mexico, I LOVE tamales!! But of course the ones here aren't so healthy! LOL

i so miss central market! i think that i would never leave colorado if we had one (except to go to the beach :))

I love kefir, over my oatmeal in the winter and over granola in the summer.

oh that kefir looks good! i just posted yesterday how to make it yourself on the countertop in about 5mins, and the taste is phenomenal :)
