Anyway, since the past few days have been filled with "healing foods" (a.k.a SOUP, BROTH, and more SOUP), today's post is from a few weeks ago. I made this pizza the night before we left for Hawaii. I was trying to get rid of the last of our food without wasting it. Its my "scrappy" quesadilla pizza, but it sure hit the spot.
Whatcha do:
For the Quesadilla, combine 2 large brown rice tortilla with 6-7 slices of almond mozzarella cheese in the middle. Cook it in the skillet with a little bit of butter or olive oil until cheese is a little melted, not completely melted though. Then transfer it on a pizza wrack and place all your fixins on top. We used organic tomato paste, black pepper, grilled chicken, steamed brussel sprouts (cut in half), tomato, and spinach (all were left over veggies int he fridge). Then sprinkle with nutritional yeast (whatever desired amount you like) and bake at 400 F for 6-7 minutes then broil for the last 2 minutes. Our oven takes longer to bake so the time may vary. The edges of the tortilla came our crusty and golden brown and the the brussel sprouts were nice and roasted. When you slices into it, the cheese filling is nice and melted! Yum!
