Quite the Concoction

So this meal was totally random. I meant to use Quinoa but didn't have enough left for the 2 of us so instead of running to the store, I scavenged my pantry. Once again, I am in a bind to throw something together and thats when I came up with quite the concoction. In the pantry I had raw organic oats, nutritional yeast, and almond meal (hmmmm). In the fridge it was some greens and veggies and applegate farm chicken sausage in the freezer. Luckily, I remembered reading Angela's blog this morning and she had an awesome recipe using oats and nutritional yeast. I was pumped! Here's what I concocted. And I promise, ITS GOOD!
Ingredients:
•1 cup gluten free or regular rolled oats
• 1/4 cup almond meal
•1 cup water
• 3/4 cup unsweetened almond milk
•1 tablespoon olive oil
•2-3 tablespoon nutritional yeast (makes it cheesy without the cheese and a good source of protein!)
• 1 tsp Cumin (or to taste)
• Sea Salt and black pepper to taste
• Crazy jane mix (has a little but garlic and onion in it)
• 1-2 tsp of Braggs Aminos

Directions:
Mix all ingredients together in a pot and bring to a boil. Reduce to low and cook for 10 minutes, stirring frequently.
Toppings:
Stir fry some veggies of your choices in 1/2 tbsp tahini butter.

Top these on your cheesy oats and add 2 tbsp greek yogurt, sliced avocado, and Chalula Sauce.

I served this with a side of AppleGate Farms Breakfast Chicken Sausage links. Kinda breakfast, kinda not. See, quite the concoction.


 
On another note......a new love has come into the Cotter House. We usually only buy a little bag with our dinner when we go to whole foods but today I decided we needed a bigger bag in our house. They are AWESOME!! So they are not the greatest for you, but at least they are chock full of yuck ingredients.

Hey lady!! I'm excited that you started your own blog - I'll still read up on the hubbys tri adventures, but I like your cooking too! ;)

This totally reminds me of the "pizza" oats I used to make when I was in high school! I just might have to resurrect that dinner...
