Needing some Balance

Happy Friday everyone! Work has been crazy lately so I shut the computer for a couple hours this afternoon and decided to play in the kitchen. No, not cooking for healthy bites, but instead baking for US! I've been wanting to use my buckwheat flour for something yummy and today I put it to use. I call this recipe my PB Balance Bars or Bread (Gluten Free). I tried to balance out this bar/bread by using buckwheat and banana for the good carbs, almond meal and peanut butter for the good fats, and greek yogurt and vanilla whey protein for the obviously, the protein.
Ingredients:
•1/2 cup liquid egg whites
• 1 egg
• 4 oz plain greek yogurt
• 1/2 cup almond meal
• 1/2 cup buckwheat flour
• 1 banana (mashed)
• 1-2 packet sugar cyrstals (or stevia)
• 1/4 cup natural peanut butter or almond butter
•1 tsp cinnamon

Directions:
1.Preheat oven to 350 degrees. Spray an 8 x 8 cake pan with baking spray, set aside.
2.Mix the egg  and eggwhites, banana, and yogurt until well combined. Stir in the rest of the ingredients.
3.Pour batter into cake pan. I added a little cinnamon and agave nectar on top before baking.
4.Bake for about 25-30 minutes, or until a knife inserted into the center comes out clean.

Served it with some more greek yogurt, sun nut butter, cinnamon sugar and yes a dried plum on top (kinda like a cherry on top, haha). Dried plums are a favorite in this house!

My computer shut down before I got the exact nutrition stats but what I did calculate came out to
118 Calories, 5 gr Fat, 8.5 gr Carbs, 1.6 gr Fiber, 1.8 gr Sugar, and around 8 gr Protein.
Serves 10 medium squares or 12 small squares
(For the the smaller squares, the calories are closer to 105)

You are SO RIGHT! For some reason I can't get myself to say "prunes" because then I feel like I should be retired and living in FLorida. Haha!

Katie,

You can easily substitute wheat bran, oat bran, coconot flour, or regular flour. I just like to keep mine higher in protein and gluten free. That is why I use buckwheat (its gluten free). Hope this helps!
