When life hands you……Venison?

First of all, whoa nelly! Thanks for the birthday wishes! I really was not expecting it so it made the day even better.Winking smile

Anyways……………onto some more important news. Well, almost more important. So, one of the hubs’ clients gave him an ABUNDANT AMOUNT of local venison sausage. My cute Kiwi husband gets pretty excited when fellow Texans spoil him with food. He feels like a native and all of sudden starts saying “ya’ll.” Ha-ha, just kidding, but you get my point.

So when he came home with all this “meat” and asked me to fix something with it, I kinda was at a loss. Uh, what exactly do you want me to make with 10lbs of sausage? So many options!

We both wanted something spicy with a little tang.

Greek Venison Sausage Patties

Ingredients:
  • Lean meat or game meat (venison, lamb, ostrich, etc.)- 1/2 lb. to 1lb.
  • Greek seasoning or you can make your own with the following.
      • /4 teaspoon dried oregano
      • 1/8 teaspoon dried thyme
      • 1/8 teaspoon dried basil
      • 1/8 teaspoon dried marjoram
      • 1/8 teaspoon dried minced onion
      • 1/8 teaspoon dried minced garlic
  • balsamic vinegar
  • paprika
  • dill (optional)
  • 1 egg (yolk and white separated)
  • Greek yogurt or plain goats milk yogurt for topping
  • dash of sea salt and black pepper
  • oil 
  • spicy ketchup or sriracha sauce
Directions:
Place ground meat in bowl and mix with hands. Add in spices, 1-2 tbsp. balsamic vinegar, and egg yolk. Mix again and form into patties. Should make anywhere between 2-4 patties. Get skillet ready, heat with a little oil on medium heat. Lightly coat your patties with the egg white and then place on skillet. Cook thoroughly (both sides) until meat is medium to well done. Remove from skillet and place on bed of salad/vegetables. Add a few tables of Greek yogurt/goat milk yogurt. Sprinkle with paprika and ketchup or sriracha sauce.

**I like to fancy up the salad with raw cashews, dried berries, and maybe even some dill pepper.

These will definitely be on my list to make again. The flavors were very nice together. Would be even better with a side of dolmas!

Ya know.. you're the only person to give me a shoutout on their blog. Another reason why I love my almond joy! Hope the birthday awesomeness continues into your weekend lovey!!! and this recipe is going to have paul searching for venison here in NC! hehe! I got tricked into eating venison once. Dave had actually killed the deer...and his family fed it to me while I thought it was regular steak. I don't remember disliking it...but I also don't remember liking it either...

My husband is from northern New York, where they are HUGE hunters...and have venison year-round. I think that the biggest downside for him living in Florida is that we don't have access to the meat like we would if we lived up north :)

I love venison! My dad loves to hunt so we usually get a good supply all winter long.

When I have an abundant amount of meat (which doesn't happen often!) I'll usually freeze most of it, or I make a mexican tortilla pie -- layered tortillas, veggies, refried beans, beef or chicken (or both!), salsa, etc all baked in the oven.

I am definitely disconnecting this weekend and I can't wait!

Happy Birthday!!!! So sorry it's a belated wish! 

I LOVE the look of those burgers and the one (or two?) times I tasted venison I loved it! We haven't had much red meat or poultry meat here at home in a while (bec I'm on a fish kick) but I would love to grill up some juicy burgers just like those. MMmmmmmmm mmmm!

YUM! I am going to have to whip up my own greek seasoning...sounds good! Depending on the meat I will whip up most anything with veggies and call it stir fry...haha. I'm married to a deer hunter so we've almost always had a ton of venison...usually ground venison because he is really good at shooting the deer in the rump (all the good cuts!). I use my ground venison like ground beef. We aren't a huge fan of straight venison (a little too gamy for us) so I do tend to grind it together with ground beef - making "benison". I use 1 lb beef for 2 lbs of venison.

Okay, I'm going to a tailgating party tomorrow and i am so making a burger salad a la Lindsay!

My dad and my brothers always have their entire deer (when they get one that is) made into those hot sticks.  Christmas at my parents house isn't complete without them on the cheese and cracker plate.

Last fall I made a huge batch of venison chili. My PT gave me a pound of ground venison, caught by her husband. I think chili/stew is a great "bulk" meal. I do, however, remember that game meat stinking up the kitchen all day!

I definitely plan on disconnecting this weekend. And cleaning. Ha!

Ha!  We are at a friend's house this weekend and they just served vennison sausage for breakfast.  The husband and kids loved it!  So - I suggest breakfast tacos, as they went over well here this morning.  The best part was having someone else cook breakfast for me.  :)

My favorite thing, as of late, with Tempeh is sandwiches! Specifically with avocado & tomato slices - maybe with some hummus + spinach leaves, or roasted red peppers too. Yummm!

chili!  you can always make a ton & it's great to freeze.  spoon it over noodles for spaghetti, bread for sloppy joes, or pizza crust & broil.  so versatile!  :)  you can even put it over meatloaf! ;)

Whee, thank you! :D The venison stew was quite easy (like always :D), I basically used venison meat (it was frozen venison goulash from NZ which I can get here at an affordable cost, but I think it would be great with venison sausage as well), onion, chopped carrots and canned tomatoes, flavored with game-compatible herbs and spices, like bay, sage, juniper, etc. I'll post the recipe soon! :)

when my hubby & I were first married, one of his co-workers gave us a lot of venison meat. we made a nice stew with it, complete with guinness beer in the stew. so good! glad your birthday was good, friend!

I'm gonna say meatballs, which I suppose is essentially the same thing as meatloaf -- just in ball form -- but for some reason it sounds so much more appetizing, no?

My Dad keeps saying to me "Kelsey, go pick up venison for me when you're at the store next" .. and i'm always saying "Dad, go kill one of the deer in our backyard you are always chasing away for eating your plants" lol :) That being said.. i am definitely curious as to what it tastes like and what i will think of it. And i think in a sausage-form it would be a great place to start!

When I have an abundance of tofu I am all about tofu-dip. 
A little steamed zucchinni and tofu and nutreast...yup!

PS- Love the venison. I don't eat it but would rather eat a deer that someone went out and caught than a factory skinless chicken.

Mmm. I love game meats. I'd do some major portioning out and freezing of the sausage- then you don't have to scramble to cook it all.  Hey I just gave myself an idea:  a Venison Scramble! Woot!.  Hope you had an awesome birthday pretty girl!

Oh man, I love venison! I have never actually prepared it myself, but I love it pan-fried and made into jerky or summer sausage. My mom actually took a TON of venison that we had in the freezer and canned it. Seems creepy, I think, to can meat (although I eat tuna and canned salmon...) but it was/is so good.

I love venison!  I just wish I could get my hands on some- not likely where I live except ordering online for $$.  The secret to the perfect burger is mixing chopped onions into the meat before grilling it!

These look fantastic, Lindsay.  I'm ashamed to admit that I've never tried venison, even after living in Idaho--another game meat happy state--for 10 years. What would you compare the flavor to?

When I have lots of meat on my hands I throw a chili or taco salad party! And if there are STILL leftovers, then I give some to my animal friends and freeze the rest. :)

To be honest, I have no idea... I had this book on how to preserve and can stuff and there was a section on meat. I can't even remember the name of the book now, and I'm not sure if it was one I was able to get online or if I had to buy it at the university book store.

i absolutely LOVE venison. I don't buy it because it's pricey around here but if I'm at a restaurant and they have it I always order it. My fave things to do with venison are : burgers ( With a lettuce bun) and venison steaks. The steaks go very well with a bearnaise sauce!

Hubs does a lot of hunting so Venison and Moose seem to always be in our freezer. However, when the giant backs of ground hamburger are on sale, my boys love Shepards Pie so that's my go to recipe. Instead on mashed yukon potatos, I use whipped sweet potatos! Yum!

Looks like a great recipe! We have tons of ground meat in our freezer from the cow share we went in on. we usually use ours in tacos, to make spinach/feta meatballs (recipe on my recipe page), in chili/stew, and I'm blanking on what else we use it with. LOL

wish I had some inventive recipe idea for you!
