Oh wow! I am excited about the responses from my last Spring Cleaning post (heart and soul). The pictures I am receiving are amazing and just so sincere! Keep them coming. I’ll post them either Monday or Tuesday.
Now since this weekend has been full of “soul searching,” I thought we might need to end it with some “soul” food. And no I don’t mean Southern Style dishes. I mean what your HEART and SOUL crave. When you get up on Sunday morning, what is that one dish that makes you your soul smile?Is it Sunday’s Pot Roast dinner with the family? What about brunch your with your best friend? Or maybe even a peaceful warm breakfast in solitude?
For me, my soul food is breakfast and on Sunday morning I love to get up early, spend some time doing my devotional, then make a delicious breakfast for me and the hubs. oh and lets not forget the endless cups of coffee. hehe.
GF Baked Cinnamon Raisin Cashew French Toast with Honey Almond Custard (topping)
Ingredients:
- Gluten Free Cinnamon Raisin Bread (I use Udi’s bread)
- 1 egg or 1/3 cup egg whites
- 1/2 cup milk (I used almond milk)
- 1 tbsp honey
- cinnamon (to taste)
- small handful or less of raw cashews
- fresh fruit to garnish
- almond butter and/or peanut flour to use for the topping.
Directions:
Preheat oven to 375F. Lightly oil a baking dish/cookie sheet and set aside. In a medium bowl, combine eggs, honey, and milk. Whisk together. Coat each piece of bread in your egg batter and then place on baking dish or cookie sheet. Spread your cashews on top and sprinkle with cinnamon. Bake for 15 minutes, then flip over bread and broil for another 1-2 minutes. Be careful you don’t burn the cashews. While the French toast is baking, take your left over batter (eggs, milk, honey) and microwave for 30 seconds. This will make a nice custard like texture. Add in 1 spoonful of melted almond butter and stir until smooth. This will be your topping. Once the bread is baked, add your honey almond topping and fresh fruit. Drizzle with syrup or honey. Now watch your soul smile.

Oh yes french toast is one of my ultimate breakfast foods I love the addition of cashews! Your sunday mornings sound similar to mine, it is my favorite day of the week, so refreshing and really prepares you for the week ahead!
Mmm, this looks so good! I rarely have french toast, but I love it and it makes me think of childhood breakfasts with my Grandpa Z... he made the best french toast :)

Woah -- you must be reading my mind, because when I saw that bread the other day, I thought it would make PERFECT french toast. I've been meaning to buy udi's bread with a coupon I have but keep putting it off. But, I need some NOW! This looks delicious!

This just looks so delicious. I love the combo of strawberries and cashews. I think peanut butter is my soul food. I love it so much and I recently started making it myself so I feel a lot better about eating it in the quantities I do.

Quick french toast story: I guess in kindergarten we did a project where we were given a piece of paper that had a section for "mom" and "dad" on it, and we were supposed to say what our parents made us that was good. SO, I said "My daddy makes good french toast and my mommy makes good pop-tarts!". I so wish I knew what was going on in my little brain at that time, cuz I don't think my dad EVER made me french toast!!! But to this day, if my mom makes something good, then she's proclaimed as making good pop-tarts!
I'd have to say, french toast has to be one of my soul foods! It's always been a favorite of mine. And green beans and coffee!

ha - you know, it was, kindof!! we would top it with syrup... but he made SEVERAL layers of egg, kept dipping + cooking, dipping + cooking, and he used big slabs of the King's Hawaiian bread... AND... added salt! weird, but I still do it sometimes, in his honor! :) crazy that I grew up SO super skinny, eating food like that! :)

Oatmeal is definitely my soul food. It comforts me and fuels me for my day. I love that it can be changed up for the seasons or my moods. Your soul food looks perfect!

My soul food is "Friday night pizza" with my family. Though I live on the other side of the globe, my family has a tradition on Friday nights to come together and make pizza together. We have done this for as long as I can remember, so it is a tradition that is very dear to my heart. I usually make the dough, my mother the toppings and my sister the salad (the boys usually chat with some beer in hand). I can't wait to return home and partake in this again; it is definitely my "soul food."

My soul food would be oolong hot tea that I get to drink while it is still hot, ideally in solitude. Life with little ones can be loud and lively, so I like to start my day quietly and gather my thoughts. It really only happens on the weekends when the husband can do the morning routine with the muchkins, so I get to listen to them downstairs with their daddy as I sit upstairs in bed with my iPod, Bible and hot tea. Bliss.
Sunday dinners are always a favorite...nothing like getting the whole family together! But I also love the peacefulness of waking up on a Sunday morning and being able to take my time eating and getting ready for the day.

My soul "food" always used to be black (Earl Grey or Chai) tea with milk. Nothing is more calming for me! When I found out that I'm dairy-intolerant, this was the hardest thing to give up. (Sounds strange, I know, but I used to start my day with tea with milk and also had it in the afternoon to bridge my afternoon tiredness, so at once, two very essential things - and sources of comfort! - in my day were missing.) I've tried almond milk, and that was quite a good solution, but not totally the same. Now I've found out that I can eat cream (because it's mainly fat), and I mix it with water and use it like milk. It works wonderfully! :D And it doesn't give me hypoglycemia like normal milk does. This is a happy day! :D
