Sunshine during the Rain

First of all, I cannot thank you enough for your comments and words of encouragement you left regarding the loss of my Nana. It means the world to know that our family is covered in prayer. Amen!
Its been such a roller coaster ride of emotions this week. With a loss of loved one brings more focus on the ones right in front of you. Like this cute guy (the hubs).

Our anniversary was the day after my Nana passed and this year it meant so much more. All I needed was an “I LOVE YOU.” Those simple words bring joy to my heart!

So you see, the first week in 2011 has been like sunshine while its raining. You can’t explain its reasoning, but its beautiful and you feel at peace.

Lets continue to talk about love. I love to spoil my hubs with food. That’s how I got him to marry me. hehe. It’s my Love Language towards him….acts of service. And since he is the king SNACKER, I decided to make him a personal snack time companion…..made with love.

Apple Cinnamon Humnut (aka nut hummus)

  • 1 can garbanzo beans
  • 1/4 c. peanut flour (can also use almond or flax meal)
  • 1/4-1/3 c. honey
  • Cinnamon, to taste
  • 1oz Unsulphured dried apples (can use more if want)
  • 1 tsp vanilla (I used liquid Vanilla Stevia)
  • A dash of almond milk, enough to allow it to blend. (About 2-3 tbsp)
  • SECRET INGREDIENT- 2 tbsp NUTTZO (or other chunky nut butter of choice)OLYMPUS DIGITAL CAMERA         OLYMPUS DIGITAL CAMERA
** Blend above ingredients. You can make the hummus smoother by removing the skins off the garbanzo beans. 

Lick the spatula! (this is a must)

In the midst of mourning you can find happiness, you can celebrate, you can love! And as this emotional roller coaster of a week continues, I will not forget to laugh. I even found a laugh line that I am pretty proud of. Just needs to deepen a little more.

I am glad to hear you are doing okay, and that there are some smiles.

I have never made a desserty hummus, and have always wanted to... yours might just be the one - it looks delicious! I'm a SNACKER too!

What a lovely post. I LOVE the idea of Sunshine during the rain. I think it's so important to try to find that sunshine when we need it most.

That hummus sounds fan-freaking-tastic too. I must make this. I would make it when I got home if I had dried apples ;-)

I am so sorry for your loss Lindsay. I hope you know Nana is still with you very much alive in your memories and in how you live your life, with joy, spirit and happiness, even in the rain.
And think how amazing that sun feels after a gloomy rain..it feels pretty nice.

I am doing IMMOO, yikes...and hopefully KS 70.3 or Muncie. Kinda taking it day by day!

What an amazing post! I love the analogy of the sun shining through the rain. I'm so inspired by your ability to remain positive this week and so glad that you have a loving, amazing husband to share this time with. He's so fortunate to have you as his wife! Billy's love language is physical touch. Back tickles and foot rubs are the way to his heart. :) I have laugh lines, too!
