Am I nuts?!

Don’t answer my title, we all know the its true. No question about it. But hey, who isn’t nut these days. Especially during the holidays!
This week has been the “gifting” week! You know, your neighbors, family friends, clients, etc. all send you baskets full chocolate, coffee, cookies, bread, etc. We just so happened to get a lot of these….

They must know I really like nuts, like A LOT! Actually, they all know I am gluten intolerant so most other baked good are out of the picture, haha. Unless they are homemade of course. :)
So what's a girl to do with an abundance of mixed nuts? Well, back to the kitchen of course. I may not be the best BAKER like this girl, but at least I am resourceful!

Mixed Nuts GF MUFFINS

ingredients:
  • 1/4 cup nuts (from mix)- I used some honey roasted vanilla peanuts
  • 1/4 cup almond meal or flour (you can buy this or just finely grind up raw or roasted almonds in food processor)
  • 2 tbsp coconut flour (or other flour of choice)
  • cinnamon
  • 1 tsp stevia or other sugar of choice 
  • 1 tsbp flaxseed
  • 1/4 cup eggwhites
  • 34 grams (1 serving) of vanilla protein powder (optional)
  • dash of sea salt
  • 1/2 tsp of baking powder
  • 1/4 cup unsweetened applesauce
  • couple tbsp of almond milk (optional)
Grind up your flavored nuts in blender or food processor. Mix them in with all other dry ingredients. stir in egg, unsweetened applesauce, and milk. Mix thoroughly. the batter will be thick and a little gritty. Add more milk if its too thick. Spoon into greased muffin tins. Bake at 350F for 10-12 minutes.

Makes 6 muffins or 12 mini muffins.
Regular sized muffins- Calories 89.5 Fat 4.9 g Saturated Fat 0.6 g Carbohydrate 5.1 g Fiber 2.6 g Sugars 0.5 g Protein 7.3 g

Told ya I liked nuts!

Going along with my “nuts” theme. My bootcamp class asked for a Torture Tuesday workout today in order burn off some Holiday stress. I guess they really haven’t enjoyed the Holiday marathon, but they asked for it and I kindly EMBRACED that request! Lets just say we all felt a little nutty after. Not sure if it was the endorphin high or the burn in our legs that caused it, haha. I’m thinking I’ll post it later, but for now I’ll leave you with this……

I have been waiting for the recipe for these... I feel like I really need a healthy option right now, and I LOVE nuts. I may try these with my favorite, cashews.

I'm off to look up these songs now. Basil just gave me a new iTunes gift card.

I love the muffin cups. So colorful and fun!

Best "gift basket" I received (and actually the only one) was a nice, big box of fruit from work. Tons of pears, apples, grapefruit, and oranges. The pears were/are delicious!

i'm nutty for nuts! i'm also just nutty right now too, so my comment might sound totally nuts. nutty muffins look nut-tastic! :) I just debated between using nut-tastic and nutter-ific. ;) love the recipe and can't wait to try it!

I like nuts too and especially baking with them... and I can't even touch nut butter- I'm addicted if I get a spoonful... ;)

Those muffins look so good!! And PS. I LOVE the concept of "Torture Tuesday" - for me that entailed a snowy run with the hubs tonight which turned out to be awesome, albeit chilly and a little treacherous on the snowy sidewalks ;-)

i think every one is nuts during the holidays. especially today with the full moon ;) but yummy recipes. love the pics! they look so good. so far i really haven't done any serious baking. that'll likely change once i step foot into my mom's house HA!

Hey you! I like those nutty muffins. It's good to find a GF recipe that doesn't have sugar in it. Jonathan's gone GF for health reasons, but he also can't have sugar (except for raw honey). I can totally make these for him!

Oh, and I thought I'd mention 2 things:
1) I am now the proud mother of a 2 day old kombucha mom.
2) Jonathan thinks those muffins on your header that I always tell you make me drool...look like MEAT! LOL! :) What's wrong with that boy?? hehe!

I love your baking cups! Are they the resuable silicone kind? They are so bright and cheery.

At work people have been bringing in sweets all week (I may be guilty of it as well.) I am normally in the classroom all day, but on Monday sat in the office for six hours next to the table of sweets. My self-control went out the window and I gobbled down processed sugars and all sorts of badness all day.
