We are Thankful

Yes, we are thankful. Thankful for precious time together, good food, and lots of love. I can’t tell you how wonderful it was to read everyone's thankful posts today! We need to think like this every day!
Since the rest of my family was up in D-town (Dallas) today….

The Kiwi Cotter clan stayed here and feasted. I would show you the pictures of the Herb Roasted Lamb but it was devoured before I had a chance to take a picture. So here’s a little recap. This is for you mom and dad!

We are excited, can’t you tell?! haha.

trying to look busy in the kitchen, I really was, promise. Winking smile

Getting in plenty of veggies

Kiwi boys pouring lots of wine. Ya, my brother in law is likes to wink, or maybe it’s the wine talking.
And last but not least, the Gluten Free Lemon Pudding pudding Cake that redeemed me in the kitchen. Served with fresh berries, cream, and honey

What will you be thankful for tomorrow, and the next day, and so on?!
Tomorrow I will be thankful for my job that allows be to yell at people, I mean encourage people. (joking, haha. I am a fitness instructor). I teach spin class in the morning and its always fun to see who rolls on the day after thanksgiving and who still has the turkey hangover.
Cheers,
LC

You need to write a cookbook. I would totally purchase it. :)

We do have so much to be thankful for - and when I have a pittyparty, I just think about those things. And smile! Glad you had a great thanksgiving!!

Your meal looks delicious! I'm on board with you that we should be thankful everyday and focus on it more than just around the holidays. It makes everything better! I really wish I could have been in your spin class this morning. :)

Haha I WISH I could have rolled into your spin class... but alas, I was at work. It's funny, we had a thanksgiving family meal at work on Thanksgiving with everything we actually made for service, and the brussel sprouts were one of my favorite parts! So delicious.
