Time to get Crackin

Today I realized something.....I've lost my awesome time management skills. I blame it on being married. I love the hubs but I think his procrastination has rubbed off on me. Sorry hubs. Anyway, after a whole day of running around I think I got about half my work done. To top it off, I came home to find out that I just got signed Jury Duty. NOOOOOOO!!!! For real? How do I get out this? Anyone  know?

Well, now its getting late so time to get crackin.................

this is actually my nephew. He's definitely crackin' it!
That being said, I'm sooo happy that Bre was able to make the MISSION MAKEOVER Muffins this weekend. She actually reported back with another "tweak" on my already "tweaked" recipe. Pretty cool! So I'll leave it up to Bre to explain her version. Happy Reading!

Bre's Report:

I had this weekend off from racing so I got to wake up leisurely on a Sunday and got to bake! I didn’t even have to get my ride in first as the girls and I are riding late today and heading out (hopefully) post-thunderstorms! Let me start with tweaks I made to Lindsay’s recipe.
FARM FRESH PEACH SUNRISE MUFFINS- Bre's Version

• 1 large egg
• Cinnamon, ground, 1 tsp
• Ginger, ground, 1 tsp
• Vanilla Extract, 1 tsp
Banana, fresh, 1/2 small mashed (I used a whole banana...I really like banana- okay I LOVE banana)
• 2 small Peaches - diced (from farmers market) roadside stand at the orchards...I live in the fruit belt!
• Honey, 1/2 tbsp
Flaxseed oil, 0.25 tbsp (optional) I opted out of this- only because I don’t have it already in the house
• Whole Ground Flaxseed Meal, 1/4 cup I used a half cup because I left out the protein powder
• Almond Breeze Almond Milk, Unsweetened Vanilla, 1/3 cup
• Truvia 1 packet
Sun Warrior vanilla protein- 60 grams (about 2.25 servings) You can also use other vanilla whey protein.
 I used a ½ cup of amaranth flour (see below as to why)


Nutritional Stats— the stats on these will be a lot different since I didn’t use the protein powder and used more flour/flax and some more banana.



Now how did I like the recipe? I LOVE IT. Alright so I’m totally biased. I love muffins- adore them. And peaches are my favourite- especially when they are in season straight from the tree! Mmmm juicy little balls of sweet goodness. Quick and easy---which is really important for me, as I really don’t get many opportunities to bake/cook, this weekend was a treat as I had the weekend off from racing. I believe making them and into the oven took me less than 15 minutes- now that is a recipe I could make even during the week even after getting home from a ride!
Grain free-as always and I’m sure I could feed these little treats (if there was any left to share) to my friends and they wouldn’t really know that it was gluten free. I like using amaranth in muffins- and that was how I made the choice of flour to use instead of the protein powder--- I generally use it to bake so it was nothing more to my decision than that.


Definitely can use this for workout fuel and recovery---in fact I just finished eating a couple with some peanut butter as a little snack before I head out on the bike. 


The ingredients. The big change I made was the whey powder. I do live near a couple health food stores but the prices are outrageous- so I typically buy “training” food (powders, CHO drinks, gels, bars) by ordering from the USA or buying them when I’m racing over there. I could go into a bigger city and try there but that requires driving and making a trip for just one item--- not something I have time to do. I also have to prioritize “training” food, they are so expensive that I have to think about what will be the most useful for me and that is usually electrolytes (drink/gels/chews) and basic bars (usually Larabars or something else that is minimal ingredients). So I don’t have whey protein in the house for that reason- it’s down on the list of training essentials. The last time I bought a jar of it, I never really used it. I don’t make shakes or drinks ever- I can’t wrap my head around drinking my calories. I prefer to chew my food- and therefore found that I never used up the protein so I’m hesitant to buy more of it.


Like Lindsay said- using any fruit in this would be yummy and I also think I might try making them with cornmeal instead of flax meal...I like peaches and corn so why not make it into a muffin??

Awesome! Thanks Bre. I can't wait to try these muffins with cornmeal next. Those would be "country" style peach muffins. I'm diggin it!

Eat.Pray.Love. It was ok. I read the book years ago and enjoyed it so much I read it multi times. I wish they got into more detail on why she was in each place - but the scenery was breath taking!

that picture is hysterical!! i saw eat pray love on friday and loved it! If you've read the book, you'll like the movie. I always think the books are better than the movies, but this one was about even.

Oh drats on the jury duty. That stinks. My husband is a major procrastinator and I have found myself slowly becoming one too. what is up with that? Why doesn't the opposite happen?

actually peach and corn definitely would taste good together in this muffin! flax meal is awesome too tho so u definitely made a wise decision there. MMMM i cant stand how yummy these look!!!!!! <3

It's funny how you write about procrastination and I have a list a mile long of things I need to do around the house and yet I'm trapped in the blogosphere. Sigh. HAHA!

I haven't seen EAT PRAY LOVE but I read 3/4 of the book. I really enjoyed reading 3/4 of it, but for some reason (after multiple attempts to buckle down and finish it) I just couldn't get into it. Weird, I know. I may see the movie just to find out what happens since I never got around to reading it HAHA!

AH NOOOO Jury duty :( I hope it isn't too awful...and if it is reward yourself with some wine after...actually, either way I think wine is called for! I have been dying to see Eat, Pray, Love. The book totally spoke to me. Great recipe and thoughts! I always like to hear about good workout foods! GOT TO FUEL!

P.S I decided not to do the Tri (I'm moving that weekend) but my dad and I are running a half-marathon in September!

booch....i would sample it after 7 days with a teaspoon...10 days it can get very vinegary on your, espi in hot weather when things ferment even faster.

jury duty. you travel for work, right? And you have a trip planned that you can't reschedule, right?

I was called for jury duty a couple of years ago, and at least in my state, there was no real way out. I ended up sitting in a waiting room from 8am until 5pm. Just sitting, never was even called on a trial! Bring something to do :)

I read Eat.Pray.Love and really don't want to watch the movie because I'm sure it will disappoint me. The book is usually so much better.

I'm a little late here but... Eat Pray Love was just OK. It did of course make me want to travel! I never read the book but my friend who did said the book was better than the movie, but isn't that always the case?
