Soaken it up!

What a Sunday! We're totally soaken up this weather. 80 degrees today, nice! Plus the husband is soaken up his victory! We won his race today. First race of the season, small and local but he felt good and hopefully this is a good start to the season! Another thing that were soaken up were my seeds. I soaked pumpkin seeds/sunflower seeds and sesame seeds in order to make some yummy crackers. They were super easy and tasty! I borrowed this recipe from Girl GOne Primal and tweaked it to make my own. Again, this saves me money from buying the fancy GF crackers (which I still LOVE but my wallet doesn't). Anyway, here goes.....


Pumpkin Seed/Sesame Crackers
  • 1 cup sesame seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
    • I soaked these at room temp for 4 hours beforehand.
  • 1 tbsp flaxseed
  • 1 tbsp nutritional yeast (gluten free)
  • herbs
  • sea salt
  • black pepper
  • A little bit of water – about 1/4 cup
Instructions:
In a food processor, create a sort of flour from the sunflower and pumpkin seeds. It will take about 2-3 minutes for the seeds to break down and turn into a more flour-like consistency, although it might be a little thicker than regular flour.


Add the sesame seeds and pulse a few times and then slowly add flaxseed meal, nutritional yeast and then water, pulsing until a thick paste forms that can be rolled out.
Between two greased pieces of baking (parchment) paper, roll out the paste as thinly as you can. Remove the upper piece of parchment.
Lightly score the batter into squares with a knife, and sprinkle with salt and pepper/herbs.



Bake at 350 degrees until browned and crisp, about 20-25 minutes depending on thickness of batter.  Cool thoroughly then gently break into squares. This is a great dip with cottage cheese or any other hard cheese.

 
Since I had a little bit of sesame seed leftover, I decided to make Sesame Salmon with Broccoli slaw for Sunday dinner. The hubs needed some Omega's for recovery tonight!

ya, they are pretty large crackers and each one is Calories 50.2, Fat 4g, saturated 0.5g, Cholesterol 0.0mg, Sodium 7.3mg, Carbohydrates 2.6g, Fiber 1g, Sugars 0.1g, Protein 2g.

Not too shabby!

That's awesome about the weather and your husband's race! I'm excited b/c it's supposed to hit 60 the rest of the week here and hopefully stop raining. Those crackers look really good? Are they really crispy like Mary's Gone Crackers?

I think they are better than Mary's crackers (maybe I'm bias, haha!) but seriously they have a nice crunch and flavor.

I was thinking about your comment re: cost of your fancy GF crackers. I am sure you have tried these already, but in case you haven't, Blue Diamond actually makes a bunch of pretty tasty GF crackers. I like the pecan ones... anyway - they are only $1.79 a box... not too shabby!

Sorry if you already knew, just wanted to share in case :-)

ps - my hubs and mom-in-law are gluten intolerant, so I love love love reading all your GF recipes! just wanted to say thanks! :-)

I love that you check my blog! I wish you lived in Austin! These crackers are so much tastier than the nut crackers from blue diamond. I do love blue diamond crackers but didn't want the milk ingredient that was in most of them. Still, they rock! Let me know if you try these. They are a great appetizer with hummus, salsa, etc.

LOL! And that is why you are the nutrition expert! I would have never thought to look for milk product in a cracker!

On another note, I joined something today that might interest you... Its a produce co-op up here in Dallas called Urban Acres. You pay $50 (for a full share - 30 lbs of produce) or $30 (for a half share) every other week. Then on every other Saturday you go pick it all up. Everything is locally grown and organic. and they give you a variety of stuff that they pick out (which I think is kind of fun because it will make me try things I have never tried before) and they give you recipes so you know how to cook the new things :-)

Anyway. I was thinking if Austin doesn't have one, it should. It would totally thrive in a place like Austin! maybe you should start one :-)
